  • We continue to work our way through preserving our 1/2 a cow ordered directly from the farm and purchased through Farmer to Fridge.
    This week hubby takes over and demonstrates how he makes smoked jerky.
    In this video he shared how to make traditional jerky and how to make a sweet and spicy jerky.

    Here are the recipes if you want to give them a go. But as you could probably tell, hubby is normally pretty fluid with the ingredients and they can be adjusted to your taste.
    Recipe 1
    1tbsp apple cider vinegar
    1 cup soy
    4tbsp pepper
    2tbsp wostershire sauce
    Chilli powder to taste
    Recipe 2
    Chilli to taste
    1 tbsp onion powder
    1 tbsp garlic powder
    2 tbsp pepper
    1/2 cup brown sugar
    2/3 cup soy sauce
    Juice from 425g pineapple tin
    1/3 cup balsamic vinegar
    1/3 cup teriyaki sauce
    1/2 cup wostershire sauce

      We purchased a few acres near Omeo eleven years ago and moved here permanently two years ago after retiring. Would never go back lol. Trying to be as self sufficient as we can..Regards Graeme

    I have tried twice to make jerky for my hubby and son in the dehydrator as I have seen in videos before never turns out great
    I now know the best present for my some for his 21st birthday as he loves jerky

      We used to do it in the dehydrator way back before the smoker. And it can give a good result if you have a recipe you like. I actually quite liked the one that came with the dehydrator. But my goodness the smoker takes it up a level.

    Love your channel ❤️ Thank you for sharing your knowledge and experience.
    One suggestion that may make much easier to slice the meat is to put it in the freezer for an hour or two to firm it up for slicing into consistent thin slices.
    I'm a city dweller in Sydney, but would love to live in the country side, but am too old to start new life.

      Thank you so much for your lovely comment on our shares 💕 Your freezing tip is a fantastic one for anyone looking to give this a go. Hubby often firm's up meat in the freezer and then uses our meat slicer. With this batch though there was no room in the freezer as we had just bought the half cow and totally filled it. This was one of the ways we preserved the meat that could fit in the freezer. It is a whole lot harder to cut when soft like this!!!
      We really need to do an end to end of the wostershire sauce. I actually made the latest batch on the weekend, but only thought to pull out the camera after it was bubbling away. As I thought to grab the phone out after it started it is a vid that should be ready on a few kitchen projects in a couple of weeks. Focusing on canning it up. I do want to do an end to end video when our plums are ready this upcoming season. But in the interim, this is a link to the wonderful recipe we use.       This batch was done with the topside, but we did also get silverside with out 1/2 cow order. Both cuts I understand are from the back leg, just different areas of it. Silverside does make for good jerky too 😀

    any tips on using dehydrators? I’ve wanted to for a while but very nervous.

      Hi Lili, they are incredible for preserving and making delicious snacks. And really quite simple. Jerky is one of the more complicated to do with them (we used one of my dehydrators before getting the smoker). But it can be as simple as a peice of fruit cut and dried I use an Ezidryand an Excalibur. I also have a solar oven I do some dehydrating in. If you jump on our channel and go into the 'Food Preserving' playlist you will see some videos of us dehydrating step by step with them.

      @@Bush_Edge_Homesteading_Aus I just realised I wasn’t clear. I meant do you have tips on using dehydrators for jerky? I’m nervous about it not cooking etc.
      We love our apple and banana chips. I know a few people who collect seconds fruit and such so we would just get some when they have an abundance and make tonnes of fruit snacks :D
      Once strawberries are in season again we plan to try dried strawberries and make strawberry fruit leathers.
      We did watch your banana chips video before doing them as I wasn’t as comfortable with it as apple chips. Thank you for the great videos :)

      @Lili-ls7um with jerky dehydrating there is info about that it needs heating 1st to get it to the required temp to kill of bacteria. I will link an article that explains it better than me. This is why I very much prefer the smoker as I can get it to that temp, whereas my dehydrator doesn't . And I don't have much time to use the oven and then the dehydrator.
