    Good video. I prefer using dry marinades. As to not add any more moisture to the meat. Hi Mountain has some really good ones. Just cuts the drying time down by a ton.

    Usually every year that I get a deer I eat the back straps and the rest of it get turned into jerky! The uds I made will run 150 with 1 vent half open for about 12 hours on 1 basket. I love it!

    Next time, save the marinade. About halfway thru the smoke/drying process, brush additional marinade on. The extra moisture is negligible to your drying time, and it adds a ton of extra flavor.

      Hang on there sparky! 😂 Make sure you boil it first. You definitely cannot just apply the marinade to partially cooked meat without getting rid of all the bacteria thats in there first.

    Thing is gonna sound crazy.
    I have been using a fishing filette knife since I was like 4 (30 now) that my papa (g-pa) passed down to me. The old cheap plastic handled Eagle Claw from Wal-Mart. Those things are beautiful for cleaning anything.

    Nice wish I could afford a 2k smoker for my jerky. I love making jerky though on the PB 1600 will have to try that seasoning. I usually make 6 lbs at a time and it doesn't last a day at work.

    Excellent video ! Oh BTW, here’s a side note. I believe that the air flow plate is a damper, not dampener. Here is the definition. “An HVAC damper (also called a duct damper) is a movable plate, located in the ductwork, that regulates airflow and redirects it to specific areas of the home. Dampers are typically used in zoning or “zone control” systems.” Just my 2 cents. Still a very good video, thanks !

    The PK Smoker is a great unit. I do prefer my jerky a bit on the chewy side. I'll use a simple Teriyaki sauce for the marinade but that mix you used looks great. Now what beer would that pair with? A cold one or two of course. Ricer have a great day.😄🍻👍

    what about mixing red wine into the seasoning instead of water?

      Those racks come with the pit. If I need another one I just use some wire racks that come with cookie sheets!

    What lind of preservatives does that mix have? What about all natural recipes instead? Smoke and salt are natural preservatives, if you like sweet honey is also a healty natural preservative.

      Its oke m8, using kits is nothing wrong with that, if they were available in my country i would buy that also, so no worries, looking forward to the video where you make it from scratch.     I have loaded smokers up with 6 racks of jerky. It gets so damp inside that black soot will drop down onto the jerky.. You have to watch how loaded up your smoker is.

    Please help me understand what is up with the gloves! Anything a gloved hand touches also touches the meat so contaminated, so why glove? If you decontaminate your hands why have gloves? If you don't want the chemicals touching your skin, why would you eat the meat?
