    The elusive white asparagus! The season may be short, but that doesn't mean we can't make the best of it. Restaurants all over the world celebrate white asparagus season with entire menus planned around the pale vegetable. Some describe the flavor as delicate whereas other may find it astringent or even bitter. I tend to side with the latter; however, I must say that with the right preparation white asparagus can shine. In this recipe, I simmer the asparagus in water and then coat the spears in a rich brown butter vinaigrette that highlights the best of this special vegetable. If you find white asparagus at your local farmers' market, grab a bunch and make this easy and elegant recipe.
