Joseph Erdos | Gastronomer's Guide

I'm Joe, a food blogger, recipe developer, writer, and editor. Early on I taught myself to cook and bake by watching Martha Stewart and Food Network, then, later on, I worked for them both. In 2008, I started my food blog Gastronomer's Guide, for which I developed nearly 300 recipes. On this new channel, I hope to cook my way through many of those recipes as well as some new ones inspired by my Hungarian-American upbringing and my love for Italian gastronomy. I'm currently living in Budapest, Hungary, so you may find me referring to the differences between living in Europe vs. America, especially when it comes to sourcing ingredients overseas. Sometimes I do smuggle back goods from the States, like American peanut butter! I love researching the history behind dishes to uncover their origins, and then I set about cooking them in an authentic way. But I don't shy away from fusion either. And, I absolutely love desserts as I'm a die-hard sweet tooth. I'll be posting every Thursday!

Why do you mix the sugar with the flour instead of into the wet mixture? Any reason?
Yes, so upon testing the recipe multiple times I've found that adding the sugar to the dry ingredients produces a much better texture. The banana bread is fluffier, and lighter this way.
Can this recipe be used to make jumbo muffins? If so, can you let me know how to adjust time/temp? If not no worries, just figured I'd ask! I'm going to make it tomorrow.
Of course it can! Without testing it for the jumbo muffin pan size myself I’d recommend 30 to 45 minutes at the same temperature. Start checking the jumbo muffins with a toothpick or skewer at 30 minutes. I have a hunch 40 minutes will be the bake time. But don’t quote me on that. 😂 Let me know how they turn out!

Hi which fish?
Use your favorite white-fleshed fish. Here in the video I make it with black cod (sablefish), but you could also use regular cod or halibut. If you'd like a whole fish, I recommend branzino or orata. Enjoy!

I have a friend from Hungary and she sent me a túrógombóc recipe to try, but it's in hungarian and I couldn't find a translation app I could trust, nor could I find an English video that explains it nicely. Use a cocktail shaker
Of course you can use a cocktail shaker, but if you don't happen to own one, a jar is a perfect substitute!
Can I watch the one with sour cream
If you'd like to try the cucumber salad with sour cream, simply add a couple of spoonfuls to this recipe and you're all set.

The Bialetti moka pot I use is a 6-cup model. So, it's enough for six to enjoy. And yes, the coffee is strong!
@@josepherdosHow many grams of coffee and mL of water per cup do you use please? I have a 9-cup pot.
@@rachelannehq With a moka pot you don't really need to be so precise. Fill the water just up to the valve in the reservoir, and then add enough coffee to fill the filter basket so that it's full but not packed. But if you would like to be precise, for a 9-cup pot you would do 550 ml water and 72 grams ground coffee.

I will use black cherries and vanilla yogurt, I might try coconut yogurt next time, maybe some Greek yogurt? I've only had this soup once or twice and can't wait to have it again
That sounds like a great combination! And, yes, Greek yogurt works well too. The soup will be thicker with Greek yogurt.
@@josepherdos I like your recipe better than others because it is easier to make and it doesn't involve flour or arrow root or anything like that. Is it okay to use frozen cherries?

That’s an interesting version! Although I’ve never seen it that way. But I don’t believe that there is a “wrong” way of making this sandwich. It will all taste the same no matter the texture. But I prefer chewing my food.

Normally it's more firm than that but I guess it's because you eat it warm. It looks nice though. Cherries are my childhood «madeleine de Proust». My grand-parents had a big cherry tree where all the kids of the family climbed up to get the cherries from every branches possible. We had also one in my parents garden. Every desserts in may/june were under this tree, picking up these almost black cherries. So much sweet and flavor. You can rarely found these in a store. And with all that cherries, I eat a lot of clafoutis too! So thank you for making me remember all of these wonderful memories. I stop the ramblings there haha! For notice : In France, a « madeleine de Proust » is a common expression referring to a smell, taste or sound which dredges up a long-lost memory.
Yes, it does firm up at room temperature or even when it's cold, but with these kinds of desserts I'm too impatient to wait! And I think it's so good warm with cold creme fraiche on top! I think all the best recipes have some kind of story behind them. I would love to have grown up with a cherry tree in my garden. Yes, I've heard of the Proustian expression before. I love it! I think because of pop culture, most people would call this a Ratatouille moment after the animated film, when the food critic Anton Ego is eating the ratatouille and suddenly is brought back to his childhood. Food has a special way of doing that!

@@danc.5509 Yes, but for that you'd need an old-fashioned citrus press and you'd want to cut the pomegranate in half. Or better yet, just buy the juice.
A tip for the pith. Put everything in water. The pith will float to the top, and you cam easily take it off with a spoon.

Yes, I've done that before. But I found the arils go bad faster if they've been washed in water. But for immediate use, it's fine.
