Today I made a soufflé cheesecake that can be baked fresh or eaten cold.
It is a soufflé type made by combining custard cream and cream cheese, so it is a moist and shwashy cheesecake.
▷Ingredients (15cm round mold)
200 g cream cheese
2 egg yolks
18 g sugar
15g rice flour
150 g milk
30 g unsalted butter
1 tsp vanilla extract
2 egg whites
50 g sugar
▷How to make:
1. Add the sugar to the egg yolks and mix well until the mixture turns white. Add the rice flour, milk, and vanilla extract, in that order, and mix.
2. Transfer the custard to a saucepan and cook the custard cream over medium to low heat, stirring frequently.
3. Remove from heat, add unsalted butter and mix until smooth.
4. Add the custard cream from (3) to the softened cream cheese and mix well.
5. Beat the egg whites with half of the sugar. Once the sugar is incorporated, add the remaining sugar and make a meringue.
6. Mix the cream cheese and meringue from ④.
7. Cover the bottom of the mold with aluminum foil and pour in the batter. Bake in a preheated oven at 150℃ for 40 minutes, then increase the temperature to 170℃ and bake for 20 minutes.
8. After baking, remove from the hot water.
