John, I absolutely love your channel! I've been subscribed for several months, and have tried several of your recipes, to great success. Baking is one of my favorite things to do in the kitchen, and my baking has improved immensely since I started using the digital scale to weigh ingredients. A few weeks ago I tried making puff pastry for the first time, by following your video, and the results were just amazing. I made sausage pasties using the homemade pastry and also using store-bought, and subjected my family to a taste test comparison. Everyone agreed the homemade was far better! When the surface of the dough reaches 82°C / 180°F, the starches in the surface of the bread leaching out, slowly forming a crust start absorbing moisture. They eventually become so saturated that they burst and liquefy. As the bread continues to cook, this starch gel turns into a brittle and glossy shell.
Hello John, my second attempt on making the bread turned out slightly dense again at the bottom. So I decided to make a couple of changes. Because I wanted to have a little bit more whole wheat, I used 2 cups whole wheat flour & 2 1/2 cups bread flour. Instead of normal sugar I used 2 teaspoons of cane liquid sugar & I added 1 egg yolk. The bread came out really light & fluffy. It was great.

Hello John, followed your recipe. My bread turned out a little dense at the bottom & a little dry. I have a little table oven. I think I have to reduce the baking time to 25 minutes instead of 30. I hand kneaded for 10 minutes, maybe I need to knead it for 5 minutes more, hopefully it will not be dense at the bottom then.

This is the actual temp, you need to adjust the temp yourself, I used to give the fan assist temperature, but it caused too much confusion around the world.

Happy New Year to you and your family 🎆 I noticed that you’ve changed your mixer, mine is on its last legs, it’s been a faithful friend for many years. Just a bit of advice on which to purchase a tilt or raising bowl? I tend to use one many times a week for cakes and bread. With having arthritic hands and being in my late sixties, I require a mixer as hand kneading is a thing of the past. Any advice would be be appreciated and helpful Cheers 🥂 John Will

Hi John, love your channel and you give so much informatiion along with the recipes. I have been working my way through your bread recipes and was looking for a cottage loaf. I did make the bread which was delicious by the way. While searching through youtube I did come across a recipe called the windsor crown, a variation on the cottage loaf but the top was snipped with scissors and looked just like a crown after it was baked. I followed this recipe I have questions if you don’t mind 1- why I can smell the yeast 2- the bread is too thick and the 3rd it came out nice and crispy out said soft in said but after awhile the crispy part gos soft thank you again
Some extra advice my friend. Go through my 4 main bread making rules below, especially 2 and 3. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. John, I am going to try this in my bread machine, I do not have a working oven at this time, my kitchen oven has the bottom burner out of it and my only other is a toaster oven. Prices are going thru the roof here, time to economize so I have dusted off my Sunbeam bread maker, I take a turkey sandwich and cup of soup to work every day and need (no pun intended) some bread. All my recipes are in cups and fluid ounces how can I convert them? Help !!

Hi John, I was wondering if you ever made a video on either Bread Pudding or Bread and Butter Pudding? My mom use to make both when I was a kid and I loved, especially the Bread Pudding which to me was the best heavy cake going. But it is impossible to find here in BC Canada and if you mention them to most here you at best get a dumb look, or at worst a look of horror. Weighing all the ingredients my dough ends up needing more water. I don't know how much more I put in, I add a splash at a time until all the dry parts at the bottom of the bowl incorporate and the dough hook actually moves thru the dough instead of just pushing from one side of the bowl to the other. Bread still comes out delicious, maybe its the flour I use. I use King Arthur organic bread and whole wheat flour.

I've made butter at home a few times when my children were younger. I wanted them to understand food doesn't magically show up on the grocery store shelf. I don't recall rinsing, but I did roll the butter ball in a muslin cloth and squeezed it thoroughly. Watching the video has me wanting to try again while my grandchildren are around for Christmas.. And your bread recipe is much as I make mine. I prefer about a 50-50 or 60-70 white/40-30 wheat mix myself. Personal preference, but all white flour is too insipid and bland; while whole wheat is a little "hard" on the insides, if you know what I mean. Especially if you don't drink enough water! I did learn how to mold the loaf from your video. Which I will try the next time I bake. I prefer using shortening or unsalted butter, preferably the latter, over oil; and virgin or extra virgin olive oil over canola or other vegetable oils. FYI, I've tried my hand at several of your recipes. Every one of them turned out beautifully and tasted rather wonderful.
I'm 66 years old. My finger joints started complaining some 20 years ago during bread kneading. When we finally purchased a Bosch mixer, later settling on a Kitchen-aid stand mixer, I thought I'd died and gone to heaven.

One question about baking with steam: It is my understanding that adding steam provides for improved oven spring. You mentioned that steam adds crisp, but would baking this bloomer with steam lead to even more oven spring?

When the surface of the dough reaches 82°C / 180°F, the starches in the surface of the bread leaching out, slowly forming a crust start absorbing moisture. They eventually become so saturated that they burst and liquefy. As the bread continues to cook, this starch gel turns into a brittle and glossy shell.
Hello John, my second attempt on making the bread turned out slightly dense again at the bottom. So I decided to make a couple of changes. Because I wanted to have a little bit more whole wheat, I used 2 cups whole wheat flour & 2 1/2 cups bread flour. Instead of normal sugar I used 2 teaspoons of cane liquid sugar & I added 1 egg yolk. The bread came out really light & fluffy. It was great.

Hello John, followed your recipe. My bread turned out a little dense at the bottom & a little dry. I have a little table oven. I think I have to reduce the baking time to 25 minutes instead of 30. I hand kneaded for 10 minutes, maybe I need to knead it for 5 minutes more, hopefully it will not be dense at the bottom then.

This is the actual temp, you need to adjust the temp yourself, I used to give the fan assist temperature, but it caused too much confusion around the world.

Just a bit of advice on which to purchase a tilt or raising bowl? I tend to use one many times a week for cakes and bread. Hi John, love your channel and you give so much informatiion along with the recipes. I have been working my way through your bread recipes and was looking for a cottage loaf. I did make the bread which was delicious by the way. While searching through youtube I did come across a recipe called the windsor crown, a variation on the cottage loaf but the top was snipped with scissors and looked just like a crown after it was baked. It was very interesting to watch and I just wondered if you have seen this before and maybe give your version of it. Thank you from Nova Scotia Canada

Hi Jon first of all thank you for your efforts and time really appreciated. I followed this recipe I have questions if you don’t mind 1- why I can smell the yeast 2- the bread is too thick and the 3rd it came out nice and crispy out said soft in said but after awhile the crispy part gos soft thank you again

Go through my 4 main bread making rules below, especially 2 and 3.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.

John, I am going to try this in my bread machine, I do not have a working oven at this time, my kitchen oven has the bottom burner out of it and my only other is a toaster oven. Prices are going thru the roof here, time to economize so I have dusted off my Sunbeam bread maker, I take a turkey sandwich and cup of soup to work every day and need (no pun intended) some bread. All my recipes are in cups and fluid ounces how can I convert them? Help !!

Hi John, I was wondering if you ever made a video on either Bread Pudding or Bread and Butter Pudding? My mom use to make both when I was a kid and I loved, especially the Bread Pudding which to me was the best heavy cake going. But it is impossible to find here in BC Canada and if you mention them to most here you at best get a dumb look, or at worst a look of horror. I'd like to give them a try myself, but would love to see how you would do it first as your demo's are worth more than all the cooking and recipe books going. Thanks in advance,

Weighing all the ingredients my dough ends up needing more water. I don't know how much more I put in, I add a splash at a time until all the dry parts at the bottom of the bowl incorporate and the dough hook actually moves thru the dough instead of just pushing from one side of the bowl to the other. Bread still comes out delicious, maybe its the flour I use. I use King Arthur organic bread and whole wheat flour.

Question: As someone that's never made bread before, I was wondering what type of mixer you'd recommend that I purchase for my kitchen? What brand and type do you use in your videos? How much should I spend to get a unit that would be up to the task of recreating your recipes? I would like to get something that would allow me to make both dough and butter. Something that is sturdy and reliable.

I've made butter at home a few times when my children were younger. I wanted them to understand food doesn't magically show up on the grocery store shelf. I don't recall rinsing, but I did roll the butter ball in a muslin cloth and squeezed it thoroughly. Watching the video has me wanting to try again while my grandchildren are around for Christmas.. And your bread recipe is much as I make mine. I prefer about a 50-50 or 60-70 white/40-30 wheat mix myself. Personal preference, but all white flour is too insipid and bland; while whole wheat is a little "hard" on the insides, if you know what I mean. Especially if you don't drink enough water! I did learn how to mold the loaf from your video. Which I will try the next time I bake. I prefer using shortening or unsalted butter, preferably the latter, over oil; and virgin or extra virgin olive oil over canola or other vegetable oils.
