    I use the oven to get all of the good stuff out of a lemon I'm going to cook with. I bake it on about 150 to 200 until it swells a bit. Take it out, let it cool enough to handle (with a towel because I'm a bit impatient) cut off only one end. Using a fork scramble it like and egg, over a bowl with a flour strainer. Only the white stuff (piff 😊) and the seeds are left in the strainer. If I need it I then use a cheese grater (usually the small side) to get the zest from the then flat peel. After seeing this great video I'll make sure to save and dehydrate my peels from now on. Thanks for the time and effort you put into these videos. Great work. They are very informative and nice to watch.

    I just made this recipe two weeks ago. I can’t stress enough to get every little bit of the white pith off the lemon before boiling it. It makes the jelly just slightly bitter if even a sliver is left on. I learned the hard way.

    I have been using the lemon jelly in a mini sugar cookie cup that I bake in a mini muffin pan. Then fill with lemon jelly and add a raspberry on top. A crowd favorite

    Oh, my. My sister in law, now in heaven, was a wonderful cook and food "preservist" (is that a word? lol). Seeing your jelly bag vividly reminded me of seeing her do the same thing with the concord grapes she and her husband grew in their garden. Oh, the things she could have taught me. But i was young and arrogant and she was gentle and humble, not one to push. I love lemon and would gladly follow Phil's example. Just give me a spoon! Yum...looks absolutely wonderful. Leisa. (:

    I have a huge lemon tree. I've been juicing and throwing them in ice cube trays. We go around the block with bags and bags of lemons giving them away to neighbors. I think I'll try this instead, and give them a really nice upgraded surprise! Thanks Leisa!

    I've never heard of lemon jam before. I guess it's similar to our orange marmalade. I think it would make a great filling for a lemon drizzle cake with lemon icing on top.

      I was looking through an old CWA (Country Women’s Association - an Australian group) cookbook the other day and they had a couple of lemon marmalade recipes. My neighbour has a lemon tree and is inundated at the moment so I’m thinking I might give it a try.

    Very labor intensive but it looks delicious. Instead of using the jelly bag could the fruit, peels, etc. be boiled in a steamer/juicer and the juice drawn off through the hose apparatus?

    I tie my cheese cloth either on my pot handles like a sling suspended inside my pot or on my lid handle, then flip my lid inside out and hang the cloth inside my pot from the lid.

    Try cutting the lemon like you would segment a grapefruit. Points (nubs) face left and right, cut lemon in half, Slice off tips to stablize lemon, trim the white segment all around the lemon and scrape out with spoon.. it may be easier. Im going to try this. Thank you for sharing. May your family stay healthy in these times. Im going to try it as a pre sweetened hot lemon drink.

    I will have to keep this in mind next yr when our lemon trees are ready to harvest. I usually juice the lemons, freeze the juice and make lemonaid (and use in cooking/baking recipes) throughout the yr. Whatever lemons we cant use we give to friends and family. Thank you for the recipe!!

    put them lemon seeds in a big flower pot with miracle grow and you will have your own lemon tree :-)

    Looks just delicious! Maybe just squeeze the lemons and get the juice out and then shave off the skins with a shaver. You wouldn’t have to wait for them to drain overnight in a cheesecloth and then you would be sure to have enough.

    My grandmother had a jelly bag that she would put all of the hot stuff into and then she would tie the top and hang it from the side of her big tall pot. :-)

    Got a bunch of lemons today for $2.98 and Target 🎯 had a lot of canning jars I made a double batch oh lemon jelly. 😋. Fiesta beans are next. Then #25 lb ground beef from freezer. Then more corned beef. And so on and so on. Pineapple and pineapple salsa was yesterday. I love my new toy 🤩

    I love lemon drops so I know I will like this. As I do with any recipe that is new to me my mind immediately goes to trying variations. Maybe make orange or Satsuma.

    Okay. I'm in the process of making this now. I have 6 myer lemons and 2 regular lemons. I hope it turns out great. I didn't have cheese cloth or jelly bags so I used 2 coffee filters.

    My question is after all that work of removing all the pith, why would you want to strain it? I understand getting rid of the peels.

    I believe lime would be delicious. Jams and jellies water bath is always 15 minutes. My best marmalade was lime,mandarin, lemon, orange and grapefruit. I also use this to sweeten tea. I think lemon juice from bottle would be great. Lemon rind grated would work especially if you have only 1-2 lemons.

    Another way to get that pith out of the picture would be to cut the lemon in half and use a grapefruit spoon to scoop out the fruit; not sure it would be faster, but I'll let you know, because this jam is on my "to do" list.

    Couldn't you cut up the rind into strips and leave it in, like in marmalade? It would add a little bulk and maybe nutrition. I usually peel my citrus and let the peels air dry. It usually only takes a few days then either throw the peels whole into tea or grind in spice grinder for seasonings. I don't feel the need to dehydrate them. Just thought I'd share that. (I'm the one who chatted with you in your live stream about a week ago who lives in East Jordan, nail of the ring finger lol)

    I will be trying this then I think I will try it with oranges. Love the taste of oranges but don't like marmalade. I like anything lemon too.

      Marybeth, lemon marmalade is very good too...unless it's the texture of marmalade you don't like. My very favorite though is grapefruit, orange and lemon marmalade.

      That’s how I peel mine. Works great. No pith with the peel at all.

    lovely recipe for jelly.
    I would not use bottled lemon juice. All together different :/ taste.
    I have a Hugh lemon tree, two crops a year and I make lots of marmalades and fig jam (fig tree too). We eat a jar of ( cuties mandarin orange marmalade ) a week no pectin required... no kidding, husband loves it and so do I. If you interested..I can't help but mention this because its so delicious and super, super easy pressure cooker recipe/video. It is on Salted Peppers videos. it can also be made with lemons.
