I mistakenly said you can double this recipe but it is really not a good idea to double jam/jelly recipes when canning. It really doesn't work well with the pectin and ingredients. Make 2 different batches separately if you want it set properly. Personally, next time I make this, I will be leaving the pectin out and making a syrup because I like this for my morning tea.
This sounds delicious and I like your idea of zesting the lemon and leaving it in, I'd do that too. I have a juicer just like yours and love how easy it is to clean. You gave lots of great tips, thank you!
A great big thank you Daelith!!! I too had this recipe marked out in my book as well. Now I know "its a keeper". I do the same thing with some of my jellies as well, I sweeten my ice tea with them. Or I even put them into my plain yogurt that I make all the time. Again thx again for particapating in this collaboration of mine, its greatly appreciated. Mrs. Mags - It probably would be good with chicken. Some one at the live chats suggested this would be good in warm water to sooth a sore throat. And just thought of this ...haven't made one in years but this would be good as the jam on a jam cake. Or on scones.

I used liquid pectin, but you could probably use powder. I wouldn't know how much powder to tell you to use though. I didn't have such good luck using powder in place of liquid on my Jalapeno Jelly.
I wondered if you were overseas. I know some ladies in Australia also have trouble finding the liquid there. I had read somewhere to use 2 Tbsp of powder for every pouch of liquid. That was not enough for the other jelly I made. It's more of a syrup. So you might have to play with it a bit to get it right. Even if it doesn't set well, it is wonderful in tea. Good luck. You may want to try Candy Apple Jelly. Made with apple cider and red hots. I'm going to try this one out thanks.
