can do in slow cooker? is it ok to leave it for say 10 hours in slow cooker or is that not good for lotus root? i haven't tried making before. glad you share tips about the lotus root and cleaning, and also placement of ingredients in pot!

Wah authentic charcoal boiled soup. Its good. The steam way also taste damn good which I always steam my soup using electric steam you know with the round tall boil clay pot with cover. The large one can have 8 to 10 rice bowl soup. Put herbal ingredients, chicken, 2 large kettled hot water - 1 steam + 1 soup. So easy, just set tle timer soup 2 hours. Roughly it will boil 3 hours (including heating time for cold water). The soup taste another level. Never open lid while its steaming hot 2-3 hours setting time. No need to care for fire. Your soup is automated. When soup ready, add good soya sauce instead salt. I like to put a teaspoon sugar. Just as seasoning taste good.
This kind of thick ceramic pot is good for porridge. But still ... you have to watch the fire and stir whenever necessary to prevent sticking. Definitely it's better than a metal pot, especially metal pots that are light will easily burn the porridge.

Find a heavy and thicker claypot, it's better.
Yes - cooking longer will make it tastier ... but you have to monitor the water level constantly

For gas stove, big fire boil for 30min; then on medium fire for 3hours. Always check the water level. If not enough, add water.
