Devil's Food Cake Layer Cake Recipe | Bakealong | Cupcake Jemma

  • It's the WEEKEND! What's this? A Sunday upload? 'How unusual', you might be thinking. Well get used to it because there's going to be more of these! Every other Sunday, I'm going to be showing you a classic cake or bake that is perfect for the weekend and you can bake along with me as you watch the video. Hopefully you already have your ingredients ready (if not don't worry, just go get them and watch this video in your own time).
    Ingredients for 3 layer x 7" cake or 2 layer 8" cake
    (or 2 layer 7" cake the measurements are in brackets), filled and iced all over...
    FROSTING:
    100ml double cream (75ml)
    175g butter (130g)
    225g 55% chocolate (170g) I like Guittard chocolate
    decent pinch salt (slightly smaller pinch!)
    SPONGES
    75g cocoa powder (50g)
    150g light brown sugar (100g)
    1tsp vanilla (1/2 tsp)
    375ml boiling water (250g)
    200g butter (135g)
    225g caster sugar (150g)
    3 eggs (2)
    335g plain flour (225g)
    1 tsp baking powder (scant 3/4 tsp)
    1 tsp baking soda (scant 3/4 tsp)

    Hint: if you don’t have a decorating turntable, you can borrrow the “wheels” under the turntable in your microwave (assuming yours has one!). Place them on your counter, pop your cakeboard or plate on top, and hey presto - instant turntable!

    Made this cake for my sister’s birthday and everyone loved it! All of the recipes I have tried so far from Jemma have been amazing!

    Made this as 2 8 inch cakes. Baked around 35 minutes at 170 celcius. It is definitely a keeper. Also, bakealong or not, the purpose of her vid is to help pple who want to bake classic cakes. This recipe is simple to follow. And the end result is divine. For those having problems with the ganache setting. Note that the fat content of your cream will make a difference to the consistency. And if your in a hot country like me, pop it into the fridge. Mine was in the fridge for about 30 minutes for it to get to the consistency shown in the vid. Happy baking!!

      Isnt this frosting become hard after keeping it in fridge due to high anount of butter and chocolate

      @@priyankakote5926 It does set in the fridge kinda firm. But just bring the cake out and let it sit at room temperature for 20 minutes and your good to go. Of course this depends on how warm ur area is

      Mine does not set at all after many hours and the layer of oil floats on top

      I can vouch for this tip! The first time I made the ganache it was horrible and oily. Completely my fault, because I accidentally used half-and-half instead of heavy cream. Fat content really makes a difference. The second time, it came together beautifully, but it was soooo runny. Popped it in the fridge, checking on it and stirring every 10-15 min or so. Took about 30 min to achieve frosting-like consistency. After I frosted the cake, I put the whole thing in the fridge for 45 min to firm up before taking it to a party. It turned out great, but the thing about making cakes in Florida is you run the very real risk of everything melting and sliding off the plate, lol.

    For 2 layered 6 inch cake, here are the quantities:
    Icing
    55ml double cream
    95g butter
    125g chocolate
    Small pinch salt
    Sponge
    35g cocoa powder
    50g brown sugar
    1/2 tsp vanilla
    180g boiling water
    100g butter
    70g sugar
    1 1/2 eggs
    165g flour
    1/2 tsp baking powder
    1/2 tsp baking soda

    I was skeptical about the measurements at first as I had always known a sponge cake to have a 1:1:1 ratio of flour, butter and sugar. So I opted to half the recipe just so I could experiment and boy was it a hit!! My sister insists it’s the best chocolate cake she’s had, and we both prefer our chocolate cakes dense and fudgey but this was light and we couldn’t believe we ate half the cake in one sitting.. at 1am! It goes quick. The hubby also asked to keep a slice for seconds and he’s not got much of a sweet tooth! Thank you Jemma, I’m baking this again in a few days for a friend’s birthday. Absolutely buzzin’! xx😆💕
    P/S: I did use Dutched cocoa powder so I omitted the baking soda and also used self raising flour and got a really good rise and also added a teaspoon of instant coffee to the liquid ingredients for an extra kick ☺️

    So there I was, a bit depressed with work and personal life. So I searched for "best chocolate cake" on youtube, because what I needed was to bury my face in cake. I've found this recipe among some weird ones (one had mayo - I tried it... not very good) and since I already knew this channel, and I loved every recipe I tried so far, I decided to give it a go. It looked dry at first sight when I was assembling it. The ganache looked too liquidy. But like magic, by the time the cake had cooled down, the chocolate puddle turned into this lucious, creamy, delicious ganache. I filled the cake, decorated it as far as my hunger allowed it, and I ate it. When I say "ate it" I mean the whole cake. I ate it. I don't regret it. Oh, and it's MOIST. Let me just say that if that is what the Devil has for a cake, I'm signing my ticket to Hell.

      @@taraivinituinabua4463 it actually did become thick after a while. If yours isn't working, depending on what happened, you can save it. If it's too runny , try heating it up again in double boiler and once hot enough, remove from heat and add chocolate bits in it. The chocolate should melt within 15-30 secs.
      If it's all seized up , try adding a little bit of heavy cream in room temperature and heating it again under a double boiler. Keep doing it till it comes together. Chocolate ganache can always be saved :)
      Don't forget to keep whisking while heating!

    I made it this Tuesday and it was success! So happy with the cake itself, moist, soft crumb, and super super chocolatey. Oh by the way, i added a tsp of instant coffee and it intesifies the flavor! Love ya Jemma and team.

    When I was a girl (1960’s) my mum always baked on Sunday afternoons for Sunday tea at 6pm. I used to head to the kitchen and ..... that’s where my love of baking began!

    I was all gung ho making this and then realized my tins are 8 inches not 7! But anyway one 2 layer cake and 6 cupcakes later I’m so happy with the result. Jemma it would be so cool if you did these in a live stream video, then it would feel more like we were actually baking along with you and more different from your usual recipe videos. You could break it into 2 live stream videos per recipe maybe, one to when the baking starts and the second from when the baking or cooling ends? I wouldn’t care if its midnight where I am I’d still bake along with you!

    Hi Jemma. Thanks a lot for this recipe. Did it for my daughter’s birthday and it turned delicious. I used your buttercream recipe as well, and decorated it as a blue Elmo cake, to meet the requirements of my 2 year old toddler. 😅

    Made this today for my daughter's birthday!     my dearest jemma this recipe is soooo goooood that i cant put another chocolate cake in my mouth ,its so devilishindeed. i just wanted to say i added a pich of salt to my dry ingredient too its makes hell lot of dif but i cant ty enough in my life ,my close ppl and i just simply swear by it lots of luv from india

    I have made this cake numerous times and everyone loves it. Surprisingly chocolate cake is one many men are not keen on. This cake is the exception everyone loves it. Great recipe and the ganache is just so easy and delicious. Another winner from this baker

    I made this choclate cake it was the most delicious choclate cake i had trust me eventhough i have made 6 to 7 choclate cakes from different recipies
    Perfect sweetness and super moist she was absolutely right when she said it melts in your mouth
    Would recomond this to everyone

    hi Jemma, what about a live Bakealong? You can make something like a no bake pie.. something which is quick to whip up.. live would be much more fun!

    I make this cake a lot. It is so easy and anyone who likes chocolate will love this cake. The ganache is great and keeps very well. I use bournville chocolate and cocoa powder and find that it is just the prefect sweetness. Even people who do not like chocolate cake like this one. Thank you Jemma another success.

    I made it just a few days ago for my husband birthday. The cake turned out very good, I just use simple syrup with some good quality vanilla extract. Because ganashe doesn't give to the sponge enough moisture.

    I made this for a friend's birthday and it was a big hit. I will say that the cake's texture was AMAZING, moist and fluffy, but the flavor was a little alkaline? for me. Like I could really taste the baking soda. No one else seemed to notice, but I thought I would share my experience. I baked two batches in two 9-inch pans for each batch at 340F for 30 minutes. I halved the ganache frosting recipe to make just enough to fill in-between the layers.
    Three batches of your cupcake buttercream frosting recipe was the perfect amount to frost the outside and do little dollops on top to decorate. Since I was doing a 3-color ombre effect, this worked out perfectly :-)

      Can i ask what type of cocoa did you use. Natural or dudched?

      @@rachaelcarter8143 I used dutch cocoa powder because it's a bit darker and I was going for a really dark chocolate cake. I guess that could have also contributed to the alkaline flavor. I'll try it with natural, see if that makes a difference.

      @@candicewaller403 Yes i think that was it. By using dutched process you are omiting the bulk of the acid needed and raising the PH.

    Every chocolate cake recipe I've ever tried that contains hot water has never turned out light. If I try this one & it does I will love you for ever 😋😂

    I think real time would be good even if it’s not live! Also a snapshot at the start of the video of tools and ingredients for cake and the same for the ganache so we are abit more prepared instead of having to pause and grab ‘oh ok eggs oh and flour’ .. can’t wait for the next one! Also the cake tasted amazing!

    I’d love to see sticky toffee pudding and maybe a steamed pudding or something like that.

    I’m glad your bake along is this format rather than livestream. If I miss the time (as I’m in Australia), I would never go and rewatch a 2 hour video.

    Live streaming could be a hassle, that's understandable but maybe these bakealongs can use a real-time system. So when you say whip the sugar/butter for five minutes, you can use some b-roll of that while running an on-screen five-minute timer with us. That way we don't have to keep pausing our phones, and will really feel like we are baking along with you. Either way, it's gonna be a lot of fun to flex on my friend's measly box cakes with this one.

    Super lovely cake! A completely different recipe that I made earlier today was a complete fail and this one saved the day! I added a bit of instant coffee to my batter and it turned out incredible.

    Plus, many of you don’t realize how long these processes really are....if this were live-streamed, it would take hours. Who’s willing to stay for that long? How would anyone keep that entertaining for that long? Think these things through.

    That looks so delicious!...i have a question about the level of the cakes. I see all the best bakers have to level their cakes, but this one guy uses those wet strips and his cakes are perfect every time. No waste. Why do not all the bakers do this?

      I’m not a professional baker, but I believe that it depends on how much it domes, if there is a lot of doming (if that is a word) you would probably need to level, however if it is quite flat I don’t think it needs to, overall it depends on the persons preference and how much the cake domes.

    Hi Jemma. I give this chocolate receipe a try and it was absolutely delicious. The only I did different was added coffee in the boiling water. This is my best chocolate receipe ever. Thank you sooo much. Xxx

      anamunir I love lemon tart or the French named tart au citron. Actually I love anything sweet which is why I’m watching this whilst being on the ketogenic diet rather than making it.
