    So Dr., which one is better for diabetics to use between Allulose and Monk Fruit? I still can’t tell exactly. Thank you for your answer. By the way, I am watching almost everyone of your videos that I can find. You are the best diabetic doctor and educator that I’ve ever known. Allulose is derived from Drumroll, enzymatic conversion of corn. To boot, it states that the Allulose syrup is from genetically modified (GMO) corn and therefore contains a very toxic chemical named glyphosate.

      Allulose for baking and ice cream, monk fruit for everything else. Allulose reacts most like sugar in baked goods and doesn't crystallize ice cream. Find an allulose that is NOT derived from corn.

    I learned about monk fruit and allulose while searching for a keto icecream recipe. I hate stevia after taste and I need sweetener for tea and coffee. Which one monk fruit or allulose has a good taste? I have very sensitive taste buds and sensitive sense of smell. I should be working as a food taster 😅
    But it is hard not finding anything to replace sugar.

      Yes. Because monk fruit takes up so much less physical space, it CANNOT be the sole sweetener used to bake. I have no idea about ratios/amounts with other sweeteners though. There's a well known and well enjoyed blend of monk fruit and erythritol, I don't personally like (but my brother does), made by a brand called lakanto. I suggest trying it. Or pure stevia powder can be used or pure monk fruit powder. Don't use a liquid sweetener in chocolate making because water and oil don't mix well. I make homemade chocolate and I mix pure monk fruit powder with the cocoa powder and dry milk powder (if using that too), then I mix the melted cocoa butter with the powders and whisk till dissolved.

      Many are mixed with Erythritol, which is fine as it is a sugar alcohol and humans don't have the enzymes required to process it, so it basically goes out of your body the same way it came in - that's also why you don't count the carbs in the nutritional info when it comes to this ingredient ;)

    Good info! Subscribed. I'm not diabetic or pre-diabetic, but I've tried all of the sugar substitutes. My taste buds prefer Xylitol over all the others. I've had to throw out fresh baked goods because of the horrible taste when using Monk Fruit, Erythritol and Stevia. Just gross! Xylitol, on the other hand, tastes 98% like sugar and I bake sweet goods using it. Allulose is a close second, but still has a slightly weird taste to me.

    • @ae31860
      @ae31860 3 года назад

      Just be cautious with xylitol - it causes lethal insulin reactions in other animals (such as dogs and cats)... And *can* cause a blood sugar spike for some - but not for others; only a glucose test can tell you. But it's GREAT for oral health as most (all?) Bacteria eat it thinking it'll be like sugar and it's not - they starve to death.
