    Have you tried roasting the mirepoix with your ham bones? Cut the veg a little chunkier and use it as a base for the bones to rest on. You can skip the sweating step and just dump the entire sheet of bones and veg into the stock.
    That's a fine-looking plating (bowling?) you have at the end.
