Lisa Hannigan is fantastic, well worth checking out. Her solo stuff as well as her work with Damien Rice.

Bluegrass music is not appreciated enough. I would recommend The Del McCoury Band playing the song 1952 Vincent Black Lightning. It's a song about motorcycles, outlaws, red hair, black leather, and angels. (And it's a love story)
You should definitely check out Robert Plants duets with Alison Krauss, I think you'd love them.
