I’m between. Thick cut bacon that is not floppy but not crispy. I haven’t done a breakfast burrito in a while. I’ll have to give that cheese skirt a try it looked really good.
I am a crispy bacon guy. I like the idea of adding tots to the burrito. I recently bought my first bag of Tots in 50 years. I just watched another video on using Tots in a breakfast burrito. He recommends if baking them in the oven cook them for 40 - 45 minutes instead of the package recommended time of 18 - 20 minutes. After baking mine for 25 minutes I was thinking the same thing,, Cook longer for crispier tots. Got to try that tomorrow for my Brat dinner.
These breakfast burritos look fantastic. The only mandatory ingredient you left out is some kind of good tomato based salsa. That my friend is the icing on the cake 😎

Yes sir! I like mine with a little mild salsa, either in it or in a small bowl for dipping into. Sometimes a little sour cream for that tangy flavor...great cook, Matt! OH, and as for my bacon preference, I like it right on the cusp of chewy with a bit of crispiness...it's a very fine line to walk!
Last weekend I did tatertots on the blackstone because I was out of hashbrowns. I cooked thick cut bacon, then used the bacon grease to shallow fry the tots. Definitely a level up.... Also, soft, floppy chewy bacon is the best.

I had a big cherry ranch and cooked the same burrito and gave them away it kept people full till quitting time, sometimes we would put other sausages in the mix and with a fresh Jalapeño pop good stuff for free you just had to come to the scales and get free breakfast. Not that way anymore to many regulation’s,
Soft bacon has the flavor. The only way to go. Crispy bacon is only good to cook into things. How do you keep from ripping the tortillas? I probably stuff mine too full 😢

Soft…chewy…floppy sounds great to me for the bacon. Tater tot crowns work pretty good too makes it a little easier to roll up.
