Made this for dinner this evening. It was indescribably delicious. My family loves chunky soups so I tweaked your recipe. I added a can of drained corn and a can of drained white kidney beans. Served it with toasted buttered flour tortillas. My kitchen smells amazing. Real comfort after dealing with Hurricane Ian all last week! Keep the recipes coming. ❤
For us single people, leave out the rice during cooking, then add a little cooked rice to the bowl when serving. That way you don’t end up with rice and stuff. You’ll have soup that stays soup.
I am gonna make some if this today. But in just a normal pot. Think I will add a bit of carrots to mine for extra veggies. To make up for the lack of chicken I have to put in the soup.
Jeff, I've been waiting forever for a taco soup episode. this one is close, and mind blowingly delicious, but I still want a taco soup, pleeeze, because i know you'll do it righteous! thx for all you do!

I made it again. Hubby & I have Covid so I made it extra brothy. I don’t have my gifts of taste & smell but I still have my imagination! Hubby can taste this go round with Covid. He says it is delicious with a hint of heat 😉 Thanks for posting this! It’s as good for Covid as Chicken Noodle Soup!
Made this soup last night and it was a hit! Only I added minced garlic to the oil, subbed shallots for the red onions and swapped corn and soaked dry pinto beans for the rice.
This just fit in my 8 Qt IP, no way it fits in a 6 Qt without altering the amounts. I can't say that the fajita taste really stood out, but this was a really delicious soup.

Bruh, this was my first dinner in the Insta pot 6qt. I bought it specifically for egg bites lol…I digress. This was a winner! Like you said in the video it really mirrors our local Mexican place that has the chicken tortilla soup. My only problem I had with it was the quick release. I have the instant pot duo plus 9 in 1 that has a small liquid catcher and the covered lid for the nozzle. Man that mess shot out like crazy and made a mess. I thought for sure when I was able to open the lid all the liquid would be gone, lol, but it wasn’t. Would it be ok next time to just let the steam dissipate naturally without the quick release?
To Stop big mess when using quick release. Place a dish towel over the release area. USE TONGS to remove and place towel in sink because it will be very hot after release is done.
Trying this tonight. My brother is diabetic and looking for low carbs. Wondering if you can add some re-fried beans as well on the back end of cooking? But doing yours per instructions first. Will write review. You never disappoint. and good restaurants are charging over $20 bucks now for Fajita's for ONE!!!!!
I want to buy one of your cookbooks (I can only afford 1), so which one do you suggest? The Original or the Comfort Food. BTW, I love veggies & eat chicken, but I don't eat pork or beef, in case that affects your recommendation. :)

my dude, love your videos, but where's the thin sliced scallion/green onion, and the dollop of sour cream. i'm just teasing; to each their own, and maybe you didn't think about it, but i would def do green onion, sour cream and some hot sauce/or like "taco-bell-style" sauce.
Wow that was one full instant pot. The pressure cook only takes a few minutes because of the heat up and cool down. By the I would airfry the veggies in a Corning ware dish. Onions and mushrooms first with olive oil. Then take the mushrooms out and add bell peppers and carrots heavier on peas and carrots. Lighter on the bell peppers in my opinion.
Looks fantastic. Probably would work with sausage as well

I love this dish, but it was missing one more ingredient, I squeezed a lime into my bowl, it really made it pop!!
I couldn’t find tortilla strips anywhere so I just got the strip chips lol. It’s in the pot as I type this and I can’t wait to try it.

I think I want to can this soup to make it shelf stable! I will have to leave out the rice and cheese but can add them when I open a jar.
