Martha this is probably the only time I totally disagree with the way you made paella. I learned from a lady that had a restaurant in Barcelona. Everyone who’s had my paella calls me the paella Queen. You add to seafood the last five minutes otherwise the seafood‘s will be like rubber. Also you steep the saffron in hot chicken broth to bring out all the flavor, definitely no cognac but a splash of white wine. I do cover it with a piece of foil or a lid. From California with love ❤
The seafood will be like rubber by the time the rice is cooked. Add it at the end!!!

I love this so much I do make this every Christmas for my family whenever we are together. It’s always a crowd pleaser and looks so special.

Dear Martha I would so,like your opinion. In 1962 on our honeymoon we stayed at a wonderful hotel,. At night we would have a starter rrwith a shrimp cocktail. Big, juicy shrimps.I never had them again until a few weeks ago.,I am 80now, it was a real treat. My home help bought a bag of frozen shrimps. They were small and tasteless. We had followed directions. 2 hours later I had food poisoning. It lasted 6 hours but I felt unwell for days. Are shrimps not as safe these days ? They were bought frozen. How I admire you., I am in NZ

I had a super large cast iron skillet siaze You're cooking in but deep, disappeared on me and claimed lost in garbage draining etc. A great group or large preparation loss etc.
That is not paella. In Spain we usually call it "arroz con cosas".
The authentic Valencian paella only has rice, rabbit, chicken, garrofón (a kind of flat bean), tomato, olive oil, salt, saffron and water. Nothing more and nothing less. The rice should be totally loose and the bottom slightly toasted.
When you cook rice you can add anything you want but please don't call it paella.
Get ready for criticism from Valencians.
