Cooking with RealmanPwns - Potato Salad for my Birthday!! :)

3 lb. small red potatoes
4 Hard-Boiled Eggs Diced
2/3 c. mayonnaise
1/2 c. sour cream
2 tbsp. white wine vinegar
1 tbsp. Dijon mustard
1 tsp. kosher salt
1 tsp. ground black pepper
2 stalks celery, chopped
1/4 c. chopped fresh dill ( 1/2 oz )
2 Heaping Tbsp of Spicy Chili Crisp
Directions
1 Place the potatoes in a large pot and cover with water. Season with salt. Bring the water to a boil over high heat, then reduce to a simmer over medium heat. Cook the potatoes until they are fork tender, (20 minutes). Drain the potatoes, then let cool 15 minutes and then cut the pieces in the size you prefer. Let cool 45 minutes more.
2 Combine the mayonnaise, sour cream, vinegar, mustard, chili crisp, salt, and pepper in a large bowl.
3 Add the celery, dill, diced eggs, chili crisp and cooled potatoes to the bowl with the dressing. Stir gently to combine.
Tip: This salad tastes great with crumbled blue cheese and/or bacon on top!
