I just made this last night, followed ingredients and directions exactly, making sure to not whisk the batter too hard, being gentle. I did cover the pan with foil to keep water from pooling ontop of the cake itself. I used the instantpot brand springform 7.5 pan and trivet. 40min cook, 40min off rest natural release, and then another 1hr rest on the trivet on the counter to cool enough to put in the fridge overnight. Doing that I ended up with no cracks at all, it cooked and set wonderfully. It turned out amazing! I got the seal of approval from 2 picky guys. They also loved the gingersnap crust. The cheesecake was smooth, cut easily, but dense and rich. The home made whipped cream was amazing and so easy as well. Thank you for the recipe and video! Now I'll have to try some others.... my wallet and waste oof!

Living in SC, my 95 yr old mama only uses real pumpkins. She makes a pumpkin pie every week. Last year, she put up in the freezer 10 pumpkins. We have 2 huge ones sitting on the sunroom floor right now. I am going to try to make this with real pumpkin. lol

I used 8 oz cream cheese and 8 oz Neufchatel cheese. I followed your directions, omitting the white sugar. There were still specs of cr. cheese, perhaps because of the N. cheese. I love your recipes. The NY style cheesecake always receive raves when I make it. I’m gluten free so I use GF ginger snaps for my crust. However, I add the melted butter to the food processor after the cookies are a good consistency. Saves a step! Thank you for great recipes!

Made the cheesecake for all my mess ups it turned out pretty good..I mixed everything together ( I thought) put it in my pan turned around there was my eggs..I dumped it into a bowl including the crust mixed it all together.. pressure 40 minutes rest 40 minutes..was so surprised it was good...

every time I make your recipe I have a ton of batter left. I measure exactly. I do use my kitchen aid so maybe It puts more air into it. Your recipe makes 2 perfect 4" pans both go in the IP at the same time. great tutorials. thanks!

Thanks for instructional. I have an electric Russell Hobbs pressure cooker (multi functions) with preset menu or manual high, med, or low settings. Should I follow your cook time and use medium setting? Thanks. I don't hav an oven and am looking forward to baking in the pressure cooker. But baking supplies where I live are imported and very expensive so I don't want to spoil the result by under baking.

Just made this. Damn good stuff. Some points I’ll make: 1. A graham cracker crust also works with this 2. The allspice hits a bit heavy, I may halve that next time but some may prefer it the way it is. 3. Don’t microwave the cream cheese too long to heat it up, mine had small curdled bits in it. 4. So I ordered the rack for by 8 quart Fagor pressure cooker that I bought not knowing it was an instant pot type lol and I have enjoyed it. I love it so much, I gifted my future son in law a crazy for cooking kind of guy one and he was pleasantly surprised. I might go to Cannonsburg Pa Dec 7 with him (he wanted to pick me up he is so sweet) for the All Clade annual sale. I am trying hard to resist the temptation of going. I missed the USA pan sale near or in Pittsburgh annually held in November. They do Sonoma All clade was there etc. I love the science of cooking not just cooking and baking probably that is why we had a big family so I had an excuse to cook. I make my own yogurt and wonder if the Fagor can? Recently, used the slow cooker for yogurt no scorching and that was great. I usually make 12 quarts of Greek Yogurt since I am Greek and we consume it. Give two teaspioons a week to your dogs if you have them it is good for them too. Do not know about cats. I am going to make the strawberry cheesecake when the rack arrives!!! Nicely done recipes and humour with your swelll kids! We have five sons and three daughters. The sons cook not so the daughters. These are all of my own original recipes so I experimented to get each of them just so. If I increase the cook time it’s because I had some form of liquid and I wanted to cook it for longer just to make sure it came out done. Looking back I don’t know if it was necessary to cook them for as long but it certainly didn’t hurt. Hope you enjoy it.
Modified your Strawberry cheesecake recipe: Made the crust out of Vanilla Wafers; swirled in about a cup of mincemeat into the cheesecake batter, poured half of it onto the crust, then added a layer of mincemeat, then topped it with the remaining batter. A dusting of cinnamon before I started the Instant Pot ... only 18 minutes left to go [then the cool down and chilling. More update tomorrow after I top it with the remaining mincemeat [sadly, I don’t have a garden for fresh mincemeat! LOL]

Hi :) It looks amazing and I am eager to try it, but I was wondering how come this one cooks for 40 minutes with 40 minute NPR when the others cheesecakes are 28 min and 10 NPR? Wondering if it's due to the pumpkin just wanted to check.
I cooked it longer and let it rest longer because of the liquid in the ingredients i.e. the pumpkin it might’ve been overkill but it turned out perfectly.

Well I used ml not oz so I made one and a half cheesecakes but it was excellent so I’m ok with making the two out of the recipe. Thank you for the information I will convert ml to oz to see what I should have used

@@TwinCitiesAdventures Uh oh! I just put my cheesecake in the instant pot. I used my kitchenaid mixer with the paddle. I whooped it good because I had lots of little bits of white cream cheese in the batter……..⏲ well its done. It overflowed slightly and the top was all cracked. Also it is brown with hundreds of white pieces of cream cheese. Next time I’ll remember to do it by hand. But why did my cream cheese not incorporate correctly?
I made this and will make another one for Thanksgiving. One thing that will help all of your followers who make your recipes. Please, Please, either speak slower while telling us the ingredients OR please print the ingredients. I had to stop my computer about 4 times to write it all down. Thank you for your great recipes.

That is a very good idea. You should never taste any batter with raw eggs because of the risk of salmonella poisoning.
On your keto deserts instead of using Stevia use Monk Fruit you won't regret it!

We just made this and OMG SO delicious and pumpkin flavored. We did have to cook it longer than 40/40.
Good to know. Could be the amount of water in the pumpkin... his did not look like it had a lot of extra water. I think I'll drain mine.

Modified your Strawberry cheesecake recipe: Made the crust out of Vanilla Wafers; swirled in about a cup of mincemeat into the cheesecake batter, poured half of it onto the crust, then added a layer of mincemeat, then topped it with the remaining batter. A dusting of cinnamon before I started the Instant Pot ... only 18 minutes left to go [then the cool down and chilling. More update tomorrow after I top it with the remaining mincemeat [sadly, I don’t have a garden for fresh mincemeat! LOL]

Hi :) It looks amazing and I am eager to try it, but I was wondering how come this one cooks for 40 minutes with 40 minute NPR when the others cheesecakes are 28 min and 10 NPR? Wondering if it's due to the pumpkin just wanted to check.
I cooked it longer and let it rest longer because of the liquid in the ingredients i.e. the pumpkin it might’ve been overkill but it turned out perfectly.

What size can of pumpkin do you use as the can I bought made too much batter but still trying it I will just make a smaller second one I guess. Not sure how this will turn out using too much pumpkin
You can never have too much pumpkin. I think that it was a 14.5 oz can.
Well I used ml not oz so I made one and a half cheesecakes but it was excellent so I’m ok with making the two out of the recipe. Thank you for the information I will convert ml to oz to see what I should have used

@@TwinCitiesAdventures Uh oh! I just put my cheesecake in the instant pot. I used my kitchenaid mixer with the paddle. I whooped it good because I had lots of little bits of white cream cheese in the batter……..⏲ well its done. It overflowed slightly and the top was all cracked. Also it is brown with hundreds of white pieces of cream cheese. Next time I’ll remember to do it by hand. But why did my cream cheese not incorporate correctly?
I made this and will make another one for Thanksgiving. One thing that will help all of your followers who make your recipes. Please, Please, either speak slower while telling us the ingredients OR please print the ingredients. I had to stop my computer about 4 times to write it all down. Thank you for your great recipes.
