@@realTempix Hi, Adam. I know this recipe is 2 yrs old but I wanted the answer so I went to the recipe on his website and it says 350 degrees for an hour and 10 minutes then turn off the oven and let it sit there for another hour. So sorry about your pudding!

I've never made a cheesecake before and I'm just learning to bake from scratch. Borrowed my MIL's Kitchenaid mixer and I made this last night. I was nervous and thought I wasn't going to be able to do it. I made it. It was gorgeous. Not one crack. Beautiful. We just enjoyed it tonight for Thanksgiving. It was absolutely amazing. I will make this again and again and again!!
I made this on 11/19/22 for a Thanksgiving dinner and it was beautiful, delicious and a bit with family! I didn’t use his homemade whipped cream but now wish I had. I used the canned squirt whipped cream and although it looked beautiful when I first put it on the cheesecake when everyone started getting their food, it melted down onto the cheesecake. The spices in this cheesecake make it taste amazing. It was very light so we didn’t feel miserable after eating a slice like you can with heavier cheesecakes (although I love heavy cheesecakes also).

@Plain Jane, It's almost a requirement in our household to have a Gingersnap/Molasses (freshly made. if possible) or Biscoff crust with anything Pumpkin.... especially a cheesecake. Also, Pumpkin Ice-cream goes great between 2 soft molasses cookies.... just sayin'.
Biscoff makes for the best crust. I found some many biscoff products lately. I made a biscoff cheesecake following your Oreo cheesecake recipe, just switched it out for biscoff instead of Oreo. I added biscoff sandwich cookies inside as well. You’re turning me into the best chef I never new I could be 😂

@@sierrasky2491 it definitely needed gelatin on my part. But maybe because my pumpkin puree is quite liquidy, do I did have to add a but more dry ingredients and gelatin. But it came out PERFECT! Perfect smooth top, NO CRACKS!

I was able to solve several problems with my cheesecake making thanks to this video. I've just baked a cheesecake with no cracks, no burnt edges, and many fewer bits of unmixed cheese. I found that it was possible to use the water bath method with less depth of water than shown in the video with success. I don't have a pan of that type, so I used a turntable at the base of the oven which has an edge of about 2.5 cm. I filled it with boiling water. Thank you for the very useful video.
Thank you! I followed this and made a great cheesecake. I also made one tweak: Instead of mixing all the pumpkin into the cake batter, I split the cake batter and mixed around 1/3rd of it. That way, I was able to get a Two-layered look. I also made 1 mistake: Somehow the water peeped into the spring foam pan during water bath. I simply turned the cake upside down and baked some more. Luckily no damage was done and came out fantastic.

Made this tonight for a family dinner on Sat. Put the extra batter into 2 small ramekins and baked them for 20min. Couldn't help myself and had to eat one of the small ones to see how it tastes....well let me tell you- it is delicious!!!! family will be impressed on Sat. I made this cheesecake yesterday to take to a family Thanksgiving meal today. I had never made it before. Everyone raved about it. Only change I made was slightly more cinnamon and left out the cardamom. I like cardamom but couldn’t decide if I thought it would be good in pumpkin cheesecake.

I made this cheesecake on thanksgiving and everybody loved it. I followed the recipe as is, and my cheesecake did not crack!!! It had a very smooth top. It was literally flawless and tasted AMAZING! I was wondering the same thing... I've been reading all the comments hoping someone had asked, I actually thought I might have missed something. In the video he says 300 degrees for 1 hr and 20 min. But then written below it, it says 350 for 1 hr and 20 min. The written recipe says to bake the crust at 350 but then to turn the oven down to 300. What should it actually be???? I have mine in the oven as I write this and am going with 325 for the hr and 20 min. Fingers crossed. Happy Thanksgiving to everyone!!!
Mine came out great! No cracks! I baked at 350 for 40 mins then went down to the 300 degree for the rest of the 40 mins. I kept an eye on is until it has a slight jiggle in the middle. I cannot wait to eat it tomorrow!

I made this cheesecake and although I browned the top too much, I was able to remove it. While it is not picture worthy, the part left on the ring tasted great. I also used Lorna Doone cookies for the crust. I’m sure this will become a tradition.

I also made a homemade pumpkin spice whipped cream to go on top. 2 Cups heavy whipping cream, 1/4 cup powered sugar, 1/4 cup pumpkin pie creamer. 1/4 Cup instant vanilla pudding mix. 1 tsp pumpkin pie spice, 2 tsp vanilla. Combine cream, vanilla and creamer and beat till frothy. Slowly add dry ingredients... I was sooo pleased with it!!

Just to double check: the instructions that pop up in the video say 350 degrees but you say (verbally) 300, which should we use?
I made this cheesecake yesterday to take to a family Thanksgiving meal today. I had never made it before. Everyone raved about it. Only change I made was slightly more cinnamon and left out the cardamom. I like cardamom but couldn’t decide if I thought it would be good in pumpkin cheesecake.

I've been reading all the comments hoping someone had asked, I actually thought I might have missed something. In the video he says 300 degrees for 1 hr and 20 min. But then written below it, it says 350 for 1 hr and 20 min. The written recipe says to bake the crust at 350 but then to turn the oven down to 300. What should it actually be????
I have mine in the oven as I write this and am going with 325 for the hr and 20 min. Fingers crossed.

Mine came out great! No cracks! I baked at 350 for 40 mins then went down to the 300 degree for the rest of the 40 mins. I kept an eye on is until it has a slight jiggle in the middle. I cannot wait to eat it tomorrow!

So you literally just ended a long hunt, because even without having baked it yet, I can already taste the spiced smoothiness and already and again I‘m grateful for the existance of your chanel. Not only because of the recipes, but also because of the way you present them - very unique. You make people understand, how much you care about the smallest things: ingridients or tools - every thing matters. Unfortunately that is something rare, not only on youtube. So I made this cheesecake last night. It literally took me about 2 hours....then let it cool for an hour. It came out perfect!! I hope it taste how it looks. I’m keeping it in the refrigerator for 3 days(thanksgiving day) I can’t wait to show off this cheesecake to my family 😊😊😊😊
I made this cheesecake and although I browned the top too much, I was able to remove it. While it is not picture worthy, the part left on the ring tasted great. I also used Lorna Doone cookies for the crust. I’m sure this will become a tradition.

Making 2 if them tonight. First one is in the oven. I decided to do a 10" form pan, just cause I didn't want extra fill left over... Making one for work, and one for home... I also decided to do 3/4 cream cheese and 1/4 mascarpone.... Will let you know!!!

I also made a homemade pumpkin spice whipped cream to go on top. 2 Cups heavy whipping cream, 1/4 cup powered sugar, 1/4 cup pumpkin pie creamer. 1/4 Cup instant vanilla pudding mix. 1 tsp pumpkin pie spice, 2 tsp vanilla. Combine cream, vanilla and creamer and beat till frothy. Slowly add dry ingredients... I was sooo pleased with it!!
