    Omg I miss home, I been in Dallas going on 2 years. Nothing like New Orleans cooking babyy! This is a typical fish plate dinner that ya neighbor would be selling with a can of Chek cold drink 😂😂💯

      But some of those spices has to go, what about people who cant eat all those spices, like diabetics & the like. Those two spices, creole & poultry spice & now seafood seasoning, do u get a commission on pushing those spices because u put them in everything u cook. A person would have to get another job just to afford all those spices.

      I thought Charlie was a clean cook, until I saw that damn cat walking through the kitchen while he was cooking. HELL TO THE FUCK NO!
      I love animals as much as the rest of the world, but when it comes to cooking, they got to go, either in an enclosed porch area or in the bedroom or out the door, dont worry, they wont go far if put outdoors, they know where their next meal is coming from, but animals & cooking is "TOTALLY UNACCEPTABLE", no ifs, &s, or but about it, & handwashing is a must also, no cross contamination!
      Sorry to do this to u, Charlie, but u know better!

      @@davidbetsey2437 Wow! Bad advice to let a cat outdoors EVER! Do you know that the average life span for indoor-outoorcats is 5 years? Yet Indoor ONLY cats can live up to 20+ years. I had 2 indoor cats that lived to be 21 & 23 yo. They NEVER went outdoors except the occasional sneak out.

    Ok , tomorrow is Friday, so I better make sure I have everything ready for this Friday meal. It’s like having someone in the kitchen, helping me as I do my cooking when I watch your videos as I cook. This young generation don’t know that, just the company and conversation, helps in the kitchen. That’s how we learned to cook. We sat, talked, and asked if there was anything we can help with. I know they started us by letting us do the simple stuff, like those peas, but the moment they were not able to cook, we would do the whole meal and shock them. They did not know we paid that much attention. After getting that praise, we wantEd to show off even more and cook more often. Moms began to get breakfast in bed. Lol

    Thanks for the great video. My ex wife made the best potato salad I ever had. Never got the recipe but I remember pealing and cubing up lots of potatoes. Also cutting up pickles mushrooms olives and onions. But never knew how she did it all. Hope yours is as good.

    I know this was prepared three years ago, but that is the best fried fish I've ever seen, was that flour and corn meal?
    I'm a singer by profession and if I ever get to New Orleans to sing, can I have dinner at your house? Your potato salad looks just like my Aunt who also was from 'Tallulah, LA.

      Hello Ms Jennifer. To be honest I don't fry food very often so I just use the boxed fish fry by Louisiana! I can make my own fish fry but I enjoy theirs very much! Wow that is amazing! Very good! I make my potato salad two different ways. One the chunky potato salad and the creamy potato salad! Enjoy them very much! Thank you for the compliments! We can try at a restaurant but you may want to try my food so If I cook something I will be sure to save you some! :)

    Hey Charlie! This brings back childhood memories for sure. Up in NC, we called that "smashed" potato salad and some chopped dill pickles (homemade, of course) went into it as well. A huge bowl would be waiting at dinner (noon) time when we came "back to the house" in the summertime. Thanks so much.

    It looks delicious. My grandpa used to fish catfish locally in ALA every time we visited. I noticed difference in taste depending on the waters where they are fished. The catfish here in CA are not so good. The only thing I'd change on that plate is subbing out peas for collard greens or black eyed peas. Yummy. Also, some hush puppies to go with that catfish. Thanks for sharing another home cooked recipe. ❤️😋

      I bet there are more young people of color who knows how to cook, than their counterparts, & they dont have to go to culinary school, unless they want to cook like their counterparts. Mom &/or Dad teaches their children how to cook & its free, & ur counterparts will be dining @ their restaurants.

    Your instructional videos are fantastic!!! They appear to be very approachable for an absolute novice like me. I did not grow up with the benefit of someone showing me how to cook. My one question to you is, "What are the proportions for the ingredients?" Thanks.

As far as the proportions goes, in the video I did mention almost all of the proportions of the ingredients with the exception of the seasoning of the fish which I didn't mention.     Just saw this video. Tasty. Looks "almost" too good to eat. I just started boiling my potatoes with the skin on. Its faster, easier to peel, no worry about potatoes turning brown and doesn't boil out the potato flavor. Keep up the tasty work. Thanks for sharing.

      I purchased it from ny local walmart. Chances are if you live outside of New Orleans the Paul seasoning is going to be difficult to find. You can purchase his seasonings at www.chefpaul.com. Hope this helps!

      There's a number of factors that play a role. Example. The last time I fried fish was when I released this video! I don't eat fried foods very often.
