I don't think Zapier supports streaming, which is what you need to building this voice-like behavior. If you don't want to rely on a SaaS or IaaS platform, your best bet is to build it yourself, or get started with an Open Source library such as Vocode
Vapi allows you to add meta data when generating the assistant using the ServerURL - you can pass an object along with the data you'd like to add. Best is to do that directly in your master prompt though

Yes, feel free to look at Vapi - they only charge you for the usage. I have quite a lot of resources about them on my channel
