    Today I made pecan pie!
    The sweet and salty taste of pie and filling and the savory taste of pecans are harmonized.
    It was so delicious that I thought it would be really good for a gift!😍
    The pie is prepared with a crispy recipe.
    It's a great recipe that can be used in various ways, such as egg tart or walnut pie!

    ▶Here is the list of ingredients😊
    [It is equivalent to one pie of 165mm in diameter X 20mm in height.]
    [pie dough : Pate sablee]
    □ Soft flour 65g
    □ Almond powder 27g
    □ Sugar powder 23g
    □ Butter 40g
    □ Salt 1g
    □ Egg 15g
    [Pecan pie filling]
    □ Brown sugar 60g
    □ Corn syrup 35g
    □ Maple syrup 15g
    □ Butter 45g
    □ Salt 2g
    □ Vanilla extract 2g
    □ Egg 70g
    □ Pecan 200g
    ▶Please check before making.
    *Sift the powder in advance.(Soft flour, Alond powder, Sugar powder)
    *Brown sugar can be replaced with dark brown sugar.
    *Make the pie as quickly as possible so that the butter does not melt.
    *You can also use walnuts instead of pecans.
    *Use butter and eggs for filling after thawing at room temperature.
    ▶Roast Pecans(100 degrees - 1 hour)
    1)Preheat the oven to 100 degrees.
    2)Wash the pecans 2-3 times in cold water.
    3)Blanch in boiling water for 2 minutes.
    4)Remove the water by supporting it on a sieve.
    5)Bake in the oven for 1 hour.(After 30 minutes, mix evenly.)
    ▶Making pie dough(170 degrees - 10 minute - 10 minute)
    1)Mix the sifted soft flour, almond powder, sugar powder.
    2)Add cold butter to step 1 and mix as if cutting with a scraper.
    3)Add salt and cold eggs, and mix in the same way as cutting.
    4)When the powder starts to clump together, quickly knead it into a ball with your hands.
    5)Please work to spread the dough evenly.(Fraser)
    6)Refrigerate the dough for 1 hour. Preheat the oven to 170 degrees.
    7)Spread the dough to a thickness of 2mm and put it in the mold.
    8)Drill a hole through the bottom with a fork. (Piquer)
    9)Please refrigerate for a while. At this time, finely chop 100g of roasted pecans.
    10)Lay the paper foil and bake for 10 minutes at 170°C with a pressing stone.
    12)Remove the press stones and paper foil and bake for another 10 minutes until golden brown.
    (Please adjust the time and temperature while watching the color.)
    Without turning off the oven, lower the temperature to 160 degrees.
    13)Let cool briefly while you make the pie filling.
    ▶Making Fillings & Making Finishing Pies(160 degrees - 30~40 minute)
    1)Put brown sugar, starch syrup, maple syrup, butter, salt, and vanilla extract in a pot and bring to a boil while stirring with a spatula.
    2)Transfer to a bowl and let cool until eggs are not cooked.
    3)Add eggs and mix.
    4)Stuff the chopped pecans into the baked pie, filling the filling.
    5)Decorate the top with pecans.
    6)Bake at 160 degrees for 35 minutes.
    7)Transfer to a cooling rack and apply maple syrup on top.
    8)After cooling for about 20 minutes, take it out of the mold.(Hot!!🥵Watch your hands!!)
