Was the 30 minute canning time increased at all because of your elevation? Also, I don’t remember if you have mentioned this or not, but I’ve always heard don’t store with the rings on. What are your thoughts on that?

Great question! No, for pressure canning the altitude adjustment for this specific pressure canner is automatic. You only have to set the correct time. For water bath canning, you do add time for altitude. At sea level you won't have to worry about either! And yes, always store with the rings off. That way if there are any seal failures you should be able to tell easily.
