Hi Jeff, my parents taught me to stuff the turkey with a picadillo recipe that is then mixed with dried cubed bread stuffing (unseasoned) and stuff both cavities of the turkey. Tie it up and use the turkey skewers and then brush on some achote for color, flavor and helps to crisps the skin. Try the picadillo stuffing in the bird. It is delicious!!!!!
My mom would use leftover relleno from the pasteles we made to stuff the turkey. It was already cooked and gave a great pork flavor to the bird. I make sure to have extra relleno for cooking my turkey every year.

All I have are those metal thermometers used at the end so would like to know what to use for continuous internal temperature monitoring. 2. Is the 30 minutes on 500 proportional to the weight of the turkey? Or is it agnostic and will be same time at 500 for 10lb turkey as for a 30lb turkey.

The first 30 mins at the 500F is not proportional to the weight of the turkey. It's primary goal is to start rendering out the fat in the skin, as well as developing the skin color, so it doesn't matter vis a vis the weight of the turkey.
And of course we eat it with rice and beans! We add sweet mix pickles our table and some yams and cranberry sauce. Not exactly PR food but it is good! LOL!

And I don't know what Will happen to my "Pavochon" Because I saw some videos with the oven roaster and I don't know if the Pavo will be like I want it. Like yours of course. What do you know about turkeys made in roaster ovens? Anyone please help me.
