      I don't even have access to salt water fish, yet I find these videos fascinating and helpful.. this recipe would be perfect for white bass, for example ;)

    These look absolutely delicious, nice job! My only critique would be, why use such a mild fish for this recipe, considering all the big flavors that get added? When I think porgy or snapper, I think poke, ceviche, grilled with a simple herb butter, or in a light stew. I can imagine you wouldn't be able to really appreciate the porgy's flavor profile with the mango, cumin, smoked paprika, garlic, etc. getting in the way. I would use a heavier flavored fish here such as tuna, salmon, bluefish, or sturgeon. But again, no doubt those taste amazing, and that's all that matters, so thanks for the share and the tips!

    Yogurt is actually pretty easy to make, I do it all time with an generic instapot. If you like yogurt its the best. And those burgers look fing awesome

    Pretty cool,in New Zealand we have an exact fish we bleed ours out you will find there is next to no blood in the fillets even when skinned.. like this video man well done 👍🏾

    Whetstone sharpening
    Like riding a bike, difficult in the beginning but once you get it, you're good for life.
    Buy the best stone you can afford.
    Makes a big difference.
    400(sets your angle) and 1000 grit will get you started

    Perfectly chopped fish for burgers. Try adding some cheek meat chopped much coarser, ala crab cake style.
