Pretty cool,in New Zealand we have an exact fish we bleed ours out you will find there is next to no blood in the fillets even when skinned.. like this video man well done 👍🏾
Yogurt is actually pretty easy to make, I do it all time with an generic instapot. If you like yogurt its the best. And those burgers look fing awesome
These look absolutely delicious, nice job! My only critique would be, why use such a mild fish for this recipe, considering all the big flavors that get added? When I think porgy or snapper, I think poke, ceviche, grilled with a simple herb butter, or in a light stew. I can imagine you wouldn't be able to really appreciate the porgy's flavor profile with the mango, cumin, smoked paprika, garlic, etc. getting in the way. I would use a heavier flavored fish here such as tuna, salmon, bluefish, or sturgeon. But again, no doubt those taste amazing, and that's all that matters, so thanks for the share and the tips!
I got adventurous and made some fish burgers. Very tasty. I cold smoked the fish with the skin on then let them cool in the fridge overnight then chopped it up and patted them out. Use Tony's cajun seasoning and other herbs. Came out great for my first time doing it
