Making Korean JAPCHAE GLASS NOODLES with Grandma! (Halmoni-approved 잡채)

- Japchae (잡채), aka Korean “glass noodles” are one of my favorite things to eat cold in the warmer months. Lucky for me, my grandma makes it to perfection. Here’s how to WHIP Japchae like a Halmoni!
P.S. I mention it in the video, but this is less of a super measured recipe video and more of a fun, (hopefully) entertaining, cook-along video to introduce you all to my awesome G-ma. “Japchae” (잡채) Ingredients:
8 ounces beef, cut into batons
5 large dried Shitake shrooms, soaked for 30 mins then sliced thin
4 garlic cloves, minced, divided
2 Tbsp Sugar, divided
3 Tbsp Light Soy, divided
3 Tbsp Toasted Sesame Oil, divided
2 Whole eggs, whisked
1 medium bunch spinach, blanched and chopped
6 oz Sweet Potato Starch Noodles
3 green onions, cut crosswise into 2 inch long pieces
1/2 Onion, sliced thinly
1 medium Carrot, matchsticks
1 small Red bell pepper, cut into thin strips
Black Pepper + Kosher Salt TT
Neutral Oil

I've lived the last 10 yrs in Masan / Changwon. It's about 40 mins away from Busan. I love Busan 사투리. Haha Japchae is amazing !! I know that Koreans mostly eat it as a side dish during the holidays. But my Korean boyfriend & I always bought it from the ajjumas at the fish market (어시장) and ate it as a meal. Haha 수고하세요 !! Great job!!

I loved this style of video, but I can see how some people might not, ‘cause it was fairly quiet and slower-paced. It was a good change though since it felt more vlog-style.

Restaurant Japchaes tend to have a darker color due to use of dark soy sauce or caramel, but both white and brown Japchaes taste amazing! Nothing can beat Halmoni's food.
Adam- I was waiting to see what your Grandma was going to do when you cut your finger. She kept looking over at you & was probably thinking... that's not right & we'll be here all day. LOL- gotta love Grandmas. Please give her my regards.
I don't know one Grandma who uses a recipe. It's always "just watch'- a handful of this & a handful of that. One of my Grandmas & her Sisters cooked for their family boarding house. She could have the table set with hot & cold foods by the time we climbed the 3-floor set of stairs to her apartment. There were no hot plates or cooling trays back then. Man, do I miss her food! We used to call my Mom 'asbestos hands' because she would flip the turkey over straight out of the oven. Your Grandma tossing the hot noodles with her bare hands just reminded me of that & made me smile. I loved this video. Our families have some phenomenal dishes that need to be passed down through the generations. My Grandmas & Mom took all their recipes to their graves; my heart breaks every time I think about what I used to eat & no longer can.

I love Korean food and have been fooling around with a few recipes like Army Base Stew and Bibimbap. I've made Japchae before and it love the sweet potato noodles, but I was so stoked to see how your grandma made it and that it was served basically room temperature. That kind of a dish has so many steps to it it's hard to get on the table hot. Can anyone tell me what she was sprinkling in from the foil packet?

How many minutes do sweet potato noodles need to cook??
If you pre-soak them for 20 minutes, only 3-5 minutes. Just feel them, when they're bouncy and tender, pull em.
