  • A must-try vegetarian carbonara!
    🇬🇧Ingredients:
    • 320g of spaghetti
    • 4 eggs
    • 100g of grated pecorino romano cheese
    • 50g of grated Parmesan cheese
    • 400g of champignon mushrooms
    • 2 tablespoons of extra virgin olive oil
    • Salt and Pepper To Taste
    Method:
    1. Clean the mushrooms and cut them into small pieces.
    2. Finely chop the garlic clove.
    3. In a non-stick pan, heat the extra virgin olive oil e
    add the garlic.
    4. Add the button mushrooms and cook over medium-high heat for about 10 minutes, until soft and golden brown.
    5. In a bowl, beat the eggs with the pecorino and parmesan until you get a smooth cream.
    6. Cook the spaghetti in plenty of salted water until al dente, drain and keep a little cooking water.
    7. Remove the garlic clove from the pan with the mushrooms.
    8. Add the spaghetti to the pan with the mushrooms and mix well.
    9. Add the egg and cheese cream and a little spaghetti cooking water. Mix quickly to prevent the eggs from congealing too much.
    10. Add salt and pepper to taste and serve hot with a sprinkling of grated pecorino romano
