I've been asked by a cashier what chickpeas were. I told her they were the same as garbanzo beans. She said she didn't know that and thanked me. I also have been asked how to cook certain veggies I've bought, or your family actually eats these. I love being able to share. Hopefully, it will help someone try new things.
Good pep talk. The main reason I like watching you two is because we're on the same wavelength; I don't enjoy cooking so I try to make large batches in order to feed myself well and avoid spending every day preparing meals.

I made the meatloaf bites. I put them in a small muffin tin. They came out delicious they were even better the second day and I put mustard on top of them.!

I hated mushrooms in my youth, too. Just tonight, my dinner was stuffed vegan portobello mushroom (made by a real chef and was left over from a dinner out), steamed broccoli with lemon balsalmic, and glazed roasted carrots. I ventured into making two new recipes this past week and both were just barely okay. I have a staple of tried-and-loved meals but wanted to add to those selections. I will discard those recipes and move on. As a child, i was a picky eater. I hated cows milk, cheese and eggs. I didn't like most meats. But living in the 60s and 70s in a small town... well, let's just say my dear mom tried hard to keep me eating, but vegetables were mostly canned. I feel fortunate to have access to so many foods. For my Thanksgiving meal, I bought bulgar! I made a meatless loaf with bulgar, oats and veggies that was very flavorful and didn't have a single lentil in it. I don't like to cook. I do like to stay on a whole food plant way of eating.

Today's lunch, Leftover pizza (whole wheat crust, with homemade veggie sausage, cheese sauce and several veggies) and fresh chopped salad with a Asian themed dressing. And kombucha.
I'm on board with the whole food, plant-based eating idea. I even do the no-sugar thing. But I draw the line at no oil and no salt. Can't do it. I've tried.
Get a copy of Dr Neil Barnards book on diabetes or the book Mastering Diabetes by a Type I diabetic. If you have Type 2 diabetes, it is affected by fat which then affects how the body processes sugar/starches. This is simplistic, but paying attention to fats is important. You will need to ease into how much sugar/starch you eat and when. If you can find a plant-based dietitian, that could be useful.
