I'm going to give this a whirl, although my entire seafaring career was working on ships with diesel-sails. The good old M.A.N.-sails almost always work as advertised, lol. To my very limited sailingship knowledge, I think you need to haul your sails as tight as possible, in order to impart maximum windforce on the vessel, i.e. "SPEED!". Not sure why they call the anchor a ketch anchor. The way it seems to be used ingame, it would be a warping anchor. Hope they work on the anchor mechanic. Normally a vessel will turn the bow into the wind (or prevailing current, whatever has the greatest force) once the anchor is down and holding. I think Following Seas has potential but it is also pre-alpha so quite rough around the edges. The only sailing I've done is in eSail. It seems pretty well done and V3 is supposed to be out in the Spring. store.steampowered.com/app/794860/eSail_Sailing_Simulator/
Following Seas looks interesting. There's a fairly similar game called Sailwind. I've only watched videos, so I wouldn't be able to personally recommend it, but it looks really good and has a couple more (at least public) years under the belt. It might be worth checking out, if you enjoyed Following Seas.
There’s a compass at the base of the aft mast, not quite readable while steering, but it’s there!
