  • On a daily basis, 82-year-old Uncle Chua cycles to Amoy Street Food Centre, for his fried kway teow hawker business. He started learning the ropes at the age of 17 as an apprentice, and started his business in 1968 at Boon Tat Street. The business has been ongoing for more than 5 decades. Unfortunately, there is no next generation after him to take over the business.
Many hawkers are the older generation who did not have a chance to receive a proper education when they were young, and came out at a young age to make a living through the hawker business. The only goal was to survive the tough times.
Amoy Fried Kway Teow has a distinct Wok Hei aroma that comes from the intense heat used to stir fry. At high temperatures, there is a caramelising of sugar in the dark soy sauce that contributes to the smoky flavours of the dish. A touch of lime juice adds a tang and enhances the charred flavours.

I stay at amoy when I was small. I have eaten this stall for over 30 years. This should be the best char keow teow I ever eat. Not so oily. The cooking is perfect.🥣

Without cockles fried Kway Teow won't taste nice but not everyone goes for it as its optional anyway.Love this simple dish.

The skills and experience of these old hawkers are mainly gone now with the next generation usually unable to persevere in long hours under such hot condition, cooking and selling food. Of course the high rent of hawker stalls is another factor. I had a great beef noodle at beach road from another old hawker like this. Cannot find another beef noodle with the same great taste ever since.

only in singapore, can you get a plate of labour intensive freshly made food tailored just for you at just 4 euros. We can never get such advantage anywhere else in the world in a first world setting at 3 rd world prices. only in singapore, we are too lucky. and our hawkers r too self sacfricing
