I've never before heard of anyone walking the groom down the aisle before, but then there are lots of wedding traditions of which I'm unaware. :) Well done to the bride and groom for FINALLY putting their foot down to the stepmother, although they should've done so right from the start it's their wedding not hers. Excellent of the dad for standing up to his wife in defense of his son.
I’m guessing they are all people places. I find it very hard to say no. I’m trying to become more assertive but I find it really difficult. I’m guessing the people in these situations are the same, and I just trying to keep the peace until it becomes an unbearable situation.

I think it’s appropriate for the mother to want a plus one. Doesn’t mean her plus one needs or should be included in wedding pictures. As a long established single person I’d still enjoy sitting with my best friend at my child’s wedding one day.
At my 3 children’s weddings the man I was dating was my +1.!He was included in all pictures. His oldest son got married and was I part of the photos? Nope, which was actually fine since it was the bride and grooms wedding ♥️😊

My dad is mostly mad at my one cousin because she imposed an age restriction that would allow her younger cousins on her mom's side of the family to attend. There's a big age gap between him and all of us but he wasn't even interested in going in the first place.
Technically their either his stepsiblings or his half, so he doesn’t *have* to invite them if he doesn’t want to. And besides, if they’re all kids who find ceremonies like that boring, I can totally see-as a big sibling myself-arranging smth else or having the kids do another activity more their speed. In my perspective, I see he’s not very close to his other siblings in general, so I find it perfectly reasonable if he doesn’t want to include them particularly, given they probably don’t recognize the significance anyways.
As you can tell from the video. Its very inconvenient and stressful to be herding a bunch of energetic little kids at a ceremony. And depends on the age but it's probably true that the children won't care much if they don't come to the ceremony, especially if the groom isn't close to them. Siblings with large age gaps often are less close with each other.

God this was my dad for the past year about my brother not being invited. God why do parents feel entitled to a day that isn't there's!

It's your wedding invite who YOU want. Your family doesn't get to be butthurt and petty. They should do better.
