These look kinda mushy. I've made it before but I usually don't pre cook my cauliflower, I pulse it until it's rice- like and throw it in a hot pan with a bit of oil. The key is to get it crispy not mushy, if I mix it with other things I do it at the end so the cauliflower doesn't go soft.
Moonlight L it's not fried, a tablespoon of oil hardly makes it unhealthy. Macro wise it's still a better option than rice, a fraction of the calories and way less carbs. So yeah it's surly still healthy.
She also over pulsed them. The cauliflower is not supposed to start sticking together when put in the food processor. You are right, she should have cooked the other things separate then added the cauliflower last just to mix in the flavors and cook slightly.

For all the "mushy" comments, if you cook it right (no overcooking and drain it properly), it doesnt get mushy. This is a perfect replacement for rice, some people have to go LCHF for medical reasons or just for diet (works really well)
For people who are supposed to be professionals telling people hoe to make stuff they aren't doing a very good job... they did terrible. I don't blame the mushy comments. The cooks in this vid made cauliflower rice look horrible.

I am the same way... I love french fries, mashed potatoes, and pasta. If you didn't cook the cauliflower ahead of time and saute it raw, I'm sure it wouldn't be so mushy.

I tweeked this so it was Whole30 compliant. Instead of peas I diced some zucchini and replaced the soy sauce with coconut aminos which is similar but a tad sweeter. I added in some green onion as well. All in all it wasn't bad. I wouldn't eat it a lot but once in a while. Makes a bunch so it will last but my wife won't eat it. LOL But it wasn't horrible. It's not rice in any stretch of the imagination and anyone who says "you won't know know the difference" is kidding themselves but if you like cauliflower then you'll like this.
can you guys have a video or two for vegetarians. I love your recipes but I'm a vegetarian and have trouble sometimes make some of the recipes. I would really appreciate if you could make one for vegetarians.❤❤
I did it! I did cheat and I used the bag of frozen fried rice from the store BUT everything else I basically followed and I did IT! I didn't burn down my kitchen and it tasted pretty good. I'm on Keto and this was SUPER easy even for a novice like me (I can barely boil water). Thank you
I tried the first one, and replaced the chicken with Quorn. It was nice, I'd make it again. We just pulsed the cauliflower in the blender, and it didn't come out mushy.
I'm a diabetic and I must try this because Chinese food with all that Rice shoots my blood up so high so anything that is an alternate for rice I will try I don't care if it's mushy
for anyone wondering, the reason you would make a "fried rice" without rice is because it's healthier, has more fiber, less carbs.
But rice isn't any less healthy...this is just a low carb diet

That's exactly what I do. I always cook cauliflower before the rest to get it crispy after seasoning it.
that's all I could say through the entire video I make cauliflower rice all the time and never looked like that poor representation.

If you steam the cauliflower instead of boiling it contains less water. Or just let it steam off after boiling.

I find grating the cauliflower gives the best result and you can do it manually with a lot less cleaning up than using a blender.

i think you ARE supposed to remove moisture from the "riced"cauliflower not just if you desire, otherwise it ends up too mushy

It makes it feel more like egg fried rice. But watching this makes me think the egg is there to make the cauliflower feel less mushy.
