They can have a conversation with the customer to discreetly find out what colours he likes!
Just walk them through the showroom and ask questions about other cars. A million different ways you can get that information.

18 min show and we only saw 10sec of finished build B- Roll. Sad plus the inconsistent color grading on the video had the wrap going from almost orange in the build area to pink when the customer pulled away.
