Grease and line one 18X13 (half sheet) pan.
12 egg whites
¼ teaspoon cream of tartar
¾ cup white sugar
1 tablespoon cornstarch
1 tablespoons ube flavoring (for ube brazo)
For the filling:
12 egg yolks
1- (390 grams) condensed milk
1 tablespoon cornstarch
Zest of 1 lemon
This is the type of Chef that I enjoyed watching along with his jokes and such. Easy to learn steps in how to make different awesome recipes. Love it.

Started baking the mamon then I used the recipe to make the ube custard and pandan and friends loved it its really perfect not to sweet just perfectly right. I made this recipe last night.. thanks for the tip. I used heavy cream (35% fat) instead of condensed milk due to the condensed milk sugar contents - my people who love this dessert are diabetic so I have to sub the dairy content and then use powder allulose or stevia as the sweetener, then xanthan gum for thickener substituting cornstarch (still starch bad for diabetics). I used two separate flavors, the coconut flavor, and the vanilla flavor. On the coconut flavor, I added small chunks of buko, coconut flakes, small diced macadamia, and small chunks of pineapple Drizzled coconut flakes around the brazo, using the whipped cream as glue. On the Vanilla flavor, I added minced strawberries and blueberries.. OMG! I created a great one that in 5 minutes of serving my guests, my BdeM disappeared from the serving tray.. Thank you!

I always make this on special occasions. I always have problems with cracking when rolling it. Sometimes it helps if you use the cake comb towards the way you will roll it. Thank you for your generous tips on making this. I won't wait for the meringue to cool down before rolling it.
