How to Make Black Eyed Beans and Spinach Indian Stew/

    Ingredients :
    2-3 cup black eyed peas frozen, thawed
    2 cup frozen chopped spinach or swiss chard or baby kale. You can use fresh then use about 3 cups.
    1 cup chopped onion
    1 cup chopped tomato
    1 Tbsp tomato paste
    1 Tbsp grated garlic or paste
    1 Tbsp grated ginger or paste
    1 small or big chopped jalapeno depend how spicy you like your stew to be
    juice of one lime
    1 Tbsp pomegranate molasses optional
    1/2 cup chopped cilantro divided
    oil and water
    Whole spices:
    2 tsp cumin seeds
    2-3 small dried red pepper (optional)
    2-4 cloves
    2-3 cardamom
    1 small cinnamon stick
    1 bay leaf
    Powder spices:
    1 tsp cumin powder
    1 tsp coriander powder
    1 tsp garam masala powder
    1/2 tsp fenugreek powder (optional)
    1/2 tsp turmeric powder
    1/4 tsp hot red pepper powder
    1/2 tsp paprika
    Salt and black pepper to taste
    Steps:
    1-Heat about 1/4 cup of oil in a large pan over low-medium heat.
    2-Add whole spices and let them heat through until they sizzle.
    3-Add onion,garlic, ginger and hot green pepper and cook for a few minutes until the onion is soft.
    5-Add tomato and mix well then add tomato paste cover and cook cook for a minute.
    5-Add all the powder spices and mix well and cook for a few seconds.
    6-Add black Eyed Beans or peas and mix well.
    7-Add water about 3 cups, depends on how much liquid you want in your stew.
    8-Cover the pan and cook over low-medium heat until the liquid has reduced to half.
    7-Add salt, black pepper, lime juice and pomegranate molasses to your taste .
    10-Add any kind of green and mix well and cover and cook over low-medium heat until the stew becomes thick to your desire consistency.
    11-Finally add cilantro and mix well and cook for few seconds.
    12-Turn off the heat and garnish with some more cilantro and enjoy immediately with basmati rice or with naan bread.
