Hi Angie, cream of tartar helps stabilise the egg whites for the meringue. It’s not absolutely essential, but does help. As a replacement, you can also use a squeeze of lemon juice 🙂

Hi, thanks for your comment. Sometimes it will break when you cut it and the bread is still warm. Some say it’s best to wait until it cools down.

Hi, thanks for your comment! Unfortunately whole egg won’t work because you need to make a meringue. The egg yolk will inhibit the silky texture.
In another recipe she used the whole egg , on utube , she is called pina cucina, she is the only one I saw use the whole egg.🤗
