I never understood why one would make a traditional looking kiridashi, especially such a beautiful one as this, and in the end putting a secondary bevel on the edge... Isn't the whole point of single bevel knives (such as the kiridashi) to be easy to sharpen and attain extreme sharpness ?

What kind of metal were you using? It looked very soft and easy to cut & file. Is it stainless? Would the knife rust?
It's 1075 steel, so yes it will stain over time. However the finish is so high that it's not likely to rust if you keep it oiled

For cutting stuff ;)
Leather cutting and marking wood and other materials. It has a flat side so you can get flush to a work piece.
