  • Andre Chiang is head chef and owner of Restaurant Andre in Singapore. Currently No.46 in the The Worlds 50 Best Restaurants and No.3 in Asia's 50 Best Restaurants. Andre cooks a dish with SCOBY. SCOBY is an acronym for Symbiotic Colony of Bacteria and Yeast and it appears as part of the brewing process of Kombucha (asian fermented tea). It can take months for SCOBY to form layers on top of the tea. Also in the dish is; Sea succulent, Black trumpet mushrooms, Leek powder, Wood sorrel and Pearl couscous.
    Told Tales is a video project by filmmaker Roarke Pearce. It's a place for short stories about artists, creatives and chefs.
