      Hi, thanks for your comment. I actually messed up the tempering the first time I did it whilst making the video and had to do it again. It can be difficult getting the tempering right.

      The doubt is: i have a wet grinder with 150 watt moter capacity.. 900 or more something rpm ... can it run for 24 hour continues.. without any break or rest..

    I really like the method of tempering it with ice cubes...bringing the temperature below 27 degree C i mostly temper by tabling method.Tempering rightly is very important for a better snap.....

    I’ve seen other videos where they just keep grinding the nibs until it makes a paste. They don’t use coco butter. What are your thoughts on that?

    Why must we add Cocoa butter when we use Cocoa beans as the butter is extracted from the beans? We can use honey to replace cane sugar to make the chocolate healthy.

      Hi, I have had no problems at all with this grinder and I've run it for more than 24 hours many times. It doesn't ever feel like it's overheating. About the ingredients, it completely depends on what type of chocolate i'm making. For this, I made a 1kg 50% milk chocolate so 250g of each ingredient. Cocoa nibs, butter, milk powder and sugar.

    Cocoa nibs have just the right balance of butter and oil. They do not need additional cocoa butter. 😊

    Great video. Chocolate is certainly a labour for love ☺️ Did u use any soy lecithins or emulsifiers? I’ve heard they’re used so that any water droplets don’t ruin the chocolate lot. Did u really manage to make chocolate without a single drop of water touching it? Wonder how often u do this 😍

    Cocoa butter increases the flavour but Was there any compulsion of adding cocoa butter as the cocoa beans already have it ?

      Hi, adding cocoa butter makes the melted chocolate less viscous and leaves you with a far more creamy and silky chocolate.

    I have that grinding machine but I don't let it run for 24 hours. It's just 6 hrs for me. I see that the chocolate can't get any smoother beyond this point.

    In video you use a frothing thermometer, however in the description you mentioned the infrared thermometer. Which one is a better choice?

      Hi, It wasn't the seeding method. I tempered the chocolate through temperature change. Heating, cooling and warming up again to create the right crystal structure. That's why I used the ice bath and hair dryer to warm it back up. Seeding is a far easier method, but I wanted to show how to make chocolate from scratch.

      @@chocolatephayanak6689 I am thinking of using butter silk but it requires a sous vide to make silk. Fortunately, I found your video, now I know a new method. However, I failed at first time I guess because of bad thermometer. I will try it again after purchase a new one.
      By the way, have you tried adding vegetable fat incorporate with cocoa butter? Many chocolate manufacturers they all add it in their recipe, for the purposes of reducing the price and enhancing the melting point. However the amount add in and tempering temperature would be a difficult question.

    No need to add cacao butter if you add cacao nibs as cacao butter is there in nibs. And also no need to add milk powder if you're planning for dark chocolate, also instead of sugar you can add honey or maple syrup for health benefits...
