Fermenting and Drying Cocoa at Home | Chocolate Phayanak
Fermenting and drying cocoa beans from cocoa pods/fruits at home. So I've been making chocolate as a hobby for a while and wanted to understand the fermenting and drying process more. Here is my first attempt at fermenting cocoa beans straight from the fruit and then drying them under the sun.

Making chocolate from the cocoa bean to the chocolate bar is quite an intensive process, but absolutely fascinating. Here you can see my step to step process of making milk chocolate. The first time I heard of using yeast to help that process, we don't use yeast . Put in containers, after some days put in sun to dry , roast then remove skin grind with mill add spice , nutmeg , bayleaf etc then roll into balls

Do you rinse before putting it out in the sun to dry? Also now it's dried from the sun do you have to roast it?

No need to add cacao butter if you add cacao nibs as cacao butter is there in nibs. And also no need to add milk powder if you're planning for dark chocolate, also instead of sugar you can add honey or maple syrup for health benefits...
How did you make that drying tray?
Can you use a dehydrator to roast it?

Cocoa nibs have just the right balance of butter and oil. They do not need additional cocoa butter. 😊
How many times do you need to show how to open a cocoa pod??? Get to the point. Than again how many times do I need to see someone put the beans in a box? How many times do I need to see you seal a foam cooler. Aahhhh

It's so much easier to just go to near by shop and buy a bar
I didn't know that it take 6 month for the cocoa bean to pod to blooms then wait for 10 to 14days to harvest. 7 days fermented 5 days in sun Wow 💫 I didn't know it would take 😳 this long to get chocolate. Thankyou for sharing your knowledge 🙏 😊
Hi, Can we use Date powder, jaggery or liquid jaggery instead of sugar?

Great video. Chocolate is certainly a labour for love ☺️ Did u use any soy lecithins or emulsifiers? I’ve heard they’re used so that any water droplets don’t ruin the chocolate lot. Did u really manage to make chocolate without a single drop of water touching it? Wonder how often u do this 😍

What yeast are we going to pour,active dry or instant?
What temperature of water do you use to dissolve the yeast,room temp?
Can't we dry it and roast it? Why the fermentation process
Fermentation is needed in order to develop the actual chocolate flavors and different notes like fruity or coffee etc. , nature is impressive.
