How to Make a Mango Lassi | Indian Food

    Lassi is a popular drink in the north. Plain lassi is made with yogurt and sugar with crushed ice and a few drops if rose water. To make this sweet version, I use mango pulp sold at Indian or Hispanic grocery stores and yogurt without stabilizers from health food stores. 1/2 cup mango pulp 2 cups plain yogurt 1 cup water 2 tablespoons sugar In a blender combine mango pulp, yogurt, water, and sugar and blend for 30 seconds until well blended and slightly foamy.
    Hi, today I'm going to teach you how to make a mango lassi. Lassis are a refreshing Indian drink made with yogurt. They're a mixture of yogurt and fruit or yogurt and salt. Today we're going to make a sweet one, a sweet mango one. We're going to add two cups of plain yogurt and we're going to add half a cup of mango pulp. Now, there's different kinds of mango pulp you can find at an Indian grocery store. There's alphonso mangos and kesar mangos, just different varieties of the fruit. I prefer alphonso mango. It's got a very rich, full, lovely balanced flavor so if you can find that I highly recommend it.
    I'm adding two tablespoons of sugar. You can sweeten it to taste. Actually, I'll put in a little extra. It's up to you. I like it a little bit sweet. And I'm going to add some water and this also is variable depending on what consistency you like. And we're just going to mix this up until it gets really nice and frothy.
    Okay. This looks like a nice consistency and I'm going to pour it over ice so it's nice and cold. This tastes great on a hot Indian afternoon. And I'm going to garnish it with just a little sprig of mint and there is your mango lassi. Yummy.

    Not bad for a basic lassi, a couple of nice touches that were shown to me by an Indian Restaurant chef are: a teaspoon of rose water per serve and the seeds of two green cardmoms well ground in a mortar and pestle. Put those ingredients into the blender, not the glasses of course.

    thank you. I never use water in my lassi, I use more yogurt or add a little milk, but never water...and adding ice to the blender will thicken it up or use frozen mangos instead of the canned fruit. It's not processed like the canned stuff.

    I use 1 cup Mango (chopped, ripe, frozen, or canned... whatever is available), 1 cup plain Yogurt, ½ cup milk, and 4 teaspoons of honey. Then I add cinnamon and cardamom. I never thought to use water. I may try that.
    Someone mentioned using ice cream. That's rather radical.

      @@fatass1 I also prefer milk instead of water because it helps keep the creamy taste intact. I'm not a fan of watery lassi and treat more like a milkshake.

      You can do it even easier with frozen fruit from the grocery store. The yogurt and bag of fruit together cost like $8 and you can make about 6 or 7 glasses

      I am sure if you freeze it in a bottle you can keep it for a quiet long time perhaps 4 Weeks ? It only takes about 5 minutes to make.

    oh god, I was about to add the whole amount of yogurt but holy jesus, I only added like a 1 cup mango to 2 cup yogurt ratio and it was already pretty damn weak. Granted I was using greek yogurt but still. I had to add a significant amount of honey. adding cardamom really helped though I added nutmeg for some god awful reason tho. It didn't ruin it but it really didn't help the flavor.

      Thank you... The ratio did give me the impression that it would be weak. I think I'll try it one to one to start (with extra mango on deck, jic). Now, to check into pre-ground cardamom. 😊

    does anyone know the ratio of canned mango to fresh? i imagine the canned mango is more concentrated.

      Nah, the canned mango is already sweetened. 95% mango pulp and 5% sugar syrup with the cans i use. (Kesar and Alphonso)
      Just try out for your liking. If you have the real sweet fresh mangos, just put in more mangos. And depending on what type of yoghurt you're using ie. the more sour type of yoghurt or the more plain, like greek yoghurt. Try to use the full fat yoghurt for the rich and creamy texture.

    We made this for a mostly Pakistani and Indian gathering and nobody liked it. Like they didn't finish their cups of it (threw it away) and one was even confused on what it was supposed to even be.... That was the last time I brought anything to those gatherings because it's horrible to see people waste food, especially food that I bought with my money despite being poor, and food I took time to put together with quality ingredients. Most of the jug came back home with us. I asked my friend who was not there and she said it's supposed to be milk and mango pulp not with yogurt.

      Grace Brielle lassi is made with yogurt and milkshake with milk. I am Indian and we make this recipe all the time. I just like to add cardamom powder too. It gives extra flavor.

      You're one genius Doctor No Effects.
      Can you imagine that in some countries. ie. the Netherlands. Sweet pakistani or Indian mangos are very hard to come by. Especially out of the season.
      And when you find them. They get sold within a day. And they turn bad within a couple of days.
      Yes, preferably i like to use the real sweet mangos without adding extra coconut sugar or honey. But the cans can be bought whole year round.
