グラデーションがとてもオシャレで動画を見ながら真似をしてみたのですが、同じ色を使っても最初の色が濃くなりすぎて中心が暗くなってしまいます。
霧吹きが少ないのでしょうか？

最初の色というのは黄色が濃くなりすぎるということでしょうか？
黄色は薄めなくても結構明るくなりがちなので、革と染料の相性かもしれません。
油分の少ないタンローほど発色がいいです。
ちなみに私はこちらのタンローを使用しました。

色止め剤の質感はお好みですが、ウレタントップのマット２〜３回塗って処理しております。
艶ありが好みの方も多いと思います。

クロコでもグラデーション染色はできるみたいですが、色止めの処理が個人ではなかなか難しいようです。

染料はセイワのローパスバチックを原液で使用しています。
染料と革にも相性があるので、なるべく油分が少ない革を選択すると発色が良くなります。

やはり複数の色を使って染める時、1回でまとめて染めるよりは、1つの色が染め終わって乾いてから染めた方がいいでしょうか？
また、霧吹きで水をかけているのはなんのためか教えて頂いてもよろしいでしょうか？
まとめて一回で染めることも可能です。ヒタヒタになるほどの水分が革に入ると色が入りにくいので、その際は乾かしてから染めてください。
水は色ムラを緩和したり、色が濃くなりすぎないよう調整する時に使用します。
ぼかしたい箇所や色を薄くしたい箇所には多めに水を吹きかけます。
