For the pickles:
6 pickling cucumbers
1 sweet onion, thinly sliced
2 tbsp sea salt
1 +1/2 cups white distilled vinegar
1/2 cup - 3/4 raw cane sugar
1/2 tsp ground turmeric
1 + 1/2 tsp mustard seeds
1 + 1/2 tsp whole peppercorns
1 tsp celery seed
water and ice for soaking
For the burgers:
2 pounds grass-fed ground beef
1 poblano pepper, seeded and finely diced
1 cup grated sharp white cheddar cheese
1 tsp garlic powder
1/2 tsp smoked paprika (or grilling seasoning)
1+ 1/2 tsp sea salt
pinch of ground pepper
