My mom would be so proud! This shelf-stable version of her chicken pot pie recipe is delicious! The taste is very close to her original recipe, which called for boiling a chicken and deboning it, using the stock along with milk, butter and flour to create a creamy white sauce, blanching some veggies and adding them to the white sauce, etc. It is a seriously yummy recipe, but it took quite a bit of time to make it from scratch, especially considering there's a pie crust that has to be made. Even if we cheated and used a rotisserie chicken and a premade pie crust, there was still quite a bit of peeling and chopping and pre-cooking involved. At least a couple of hours start to finish. This version cuts out all the extra work and time. You can have a homemade chicken pot pie with a scratch-made crust on your table in 45 minutes. That's AMAZING!! I hope you give this a try. It's an outstanding recipe, and it's not difficult to make either. Prep several of these jars for your pantry shelf and have it ready and waiting for you. That way, chicken pot pie is possible on a weeknight and you'll feel like a rock star in the kitchen!

Chicken Pot Pie
quart jar (4 servings)
1 cup grilled chicken dices
1 cup bechamel sauce (use my copycat recipe if needed, also on my channel)
1 cup potato dices
1/2 cup green peas
1/4 cup celery, pulsed in the blender
2-3 Tbsp carrots
1-2 Tbsp chopped onions
1/2 cup sweet corn
1 tsp chicken bouillon
1/4 tsp kosher salt
1/4 tsp black pepper
1/4 tsp thyme
oxygen absorber
Flaky Pie Crust:
this is a 1/2 recipe of my pie crust mix (for 1 pie crust)
pint jar
mix the following ingredients in a food processor:
1 cup flour
2 tsp scrambled egg mix
2 tsp butter powder
1/2 tsp kosher salt
pulse the above ingredients then add:
1/3 cup lard (or shortening)
pulse for 30 seconds or until mixture is the texture of wet sand
store on the shelf for up to 3-4 months
To Prepare:
Empty the contents of the pot pie jar into a large skillet. Add 4 to 5 cups water and stir well. Turn your heat to medium and let it gently come to a boil. Meanwhile, make your pie crust. Empty the contents of the pie crust mix jar into a medium bowl. Add about 2 Tbsp ice water and stir well until it starts to form a ball. Turn out your dough ball onto a floured surface. Flour your hands to prevent sticking. Shape into a disc and roll out into whatever shape you need using a rolling pin (add more water if cracks form). If using a round casserole dish, try to roll out into a circle. Refrigerate the pie crust until needed. Preheat your oven to 400 F. Once your pot pie filling has come to a boil, decrease heat to medium low and simmer for 15 to 20 mins. Stir occasionally so it doesn't stick. Add 3 Tbsp fresh cream or milk, optional. Taste and adjust. Add your filling to a medium prepared casserole dish and top with pie crust. Make an egg wash with 1 tsp scrambled egg mix and 1 Tbsp water, then brush that onto the top of your pie crust. Bake at 400 F for 20 mins or until pie crust is golden brown. Let stand for 5 mins to cool. Enjoy! Хобби

Ok, I made it and my husband loved it. I did use fresh chicken because I had some on hand and I took your advice and added some half and half (I didn’t have heavy cream) and it was sooo good. I made 5 jars for the pantry. I did cut the recipe in half and it made two days of dinner.

Looks delish! I prefer my chicken pot pie somewhat dryer rather than soupy, and you use the same basic ingredients I use. One thing I always add to mine when I make it "fresh," is shredded pepper jack cheese, and it makes it soooooo good. Good thing Thrive has shredded pepper jack! Thanks, and keep 'em comin'!

Could beef dices be swapped out for the chicken and maybe a mushroom or brown gravy mis for thje bechamel?
@bebopandbecca3096 Hi! Yes, that would be like my mom's beef pot pie.... but keep the bechamel sauce and instead swap out the chicken bouillon for beef or use a scoop of Espagnole sauce powder. And add some crushed mushrooms in place of a few potatoes. The shredded beef or beef dices would work. Great idea!! I loved my mom's beef pot pie! Maybe I'll do another video for that sometime 💚

Which size absorber are you using for the jars?
I usually use a 100cc for a quart jar. The ones you see in my videos are props that I use over and over, since I cook it right afterwards. There are charts online you might refer to in order to be sure.
