    I must have pie on the brain since last week's recipe was chicken pot pie, and this week it's shepherd's pie! Or maybe it's just that I'm craving comfort food and love making my mom's recipes from her old cookbooks. Either way, this recipe is sure to please because it's both tasty and easy. You do need 2 pans to prepare it, but other than that, it's really simple. And this filling is by far the tastiest I've ever made for this recipe. SOOOOO yummy!!     Cottage Pie (Shepherd's Pie)
    4 servings
    Jar #1 (the filling)
    quart jar
    2 cups ground beef, pulsed in the blender
    1 Tbsp tomato powder
    1 tsp beef bouillon
    1 tsp paprika
    1 tsp dry mustard
    1/2 tsp kosher salt
    1/4 tsp black pepper
    in a sandwich baggie, add:
    2/3 sweet corn
    1/2 cup green peas
    2 Tbsp carrots
    2 Tbsp chopped onions
    1 tsp TL garlic
    1/4 cup espagnole sauce
    1 Tbsp Worcestershire powder
    seal the baggie
    oxygen absorber
    Jar #2 (the potato topping)
    24-oz jar
    2 cups instant mashed potato flakes
    2 Tbsp butter powder
    2 Tbsp sour cream powder
    2 Tbsp instant milk or heavy cream powder
    1 tsp kosher salt
    1/2 tsp black pepper
    1 Tbsp green onions (optional)
    1/4 tsp garlic powder (optional)
    1/2 cup cheddar, blended
    2 Tbsp parmesan, blended
    To Prepare:
    Heat a large skillet over medium heat with 2-3 Tbsp oil or butter. When pan is hot and fat is melted, remove the veggie baggie from the filling jar and set aside. Add meat and seasonings and "dry sauté" for 2 minutes or until the seasonings and meat are coated in the fat and the mixture becomes fragrant. Add 3 cups water and stir well. Add veggie baggie. Slowly bring to a boil over medium heat (it's going to look like too much water and you're going to think you've messed up, but it's fine and you haven't). Meanwhile, start the potatoes. In a separate pot, bring 3 cups water to a boil. Add the contents of the potatoes and cheese jar. Stir well, and remove from heat. Cover and let stand. They should be pretty thick and stiff. If they aren't, add some more instant potato flakes. Back to the filling... when the meat mixture has come to a boil, reduce heat to med low (4 of 10 on my stove) and continue to boil/simmer for about 15 mins. I covered my mixture for part of the time and cooked it uncovered for the rest. When the peas are plumped up and the meat is tender, the sauce should have thickened up. Cook it until it's the consistency you like for your filling. Not too dry, but not too much liquid. Whenever it's the right thickness, transfer it into a medium sized prepared casserole dish. Dollop the top with the mashed potatoes and smooth to seal the edges. Rough up the top of the potatoes and bake in a 375 degree oven for 15 mins OR broil for 5 mins until browned. Let stand for 5-10 mins. Enjoy!

    YUM! Definitely going on my list ~ no corn, though. More peas and carrots. 😉🥕 Your mom sure had some great recipes. I love that you're able to adapt them for the pantry. And I bet the potato topping would make a tasty (and easy) side dish all by itself. 🤔 Hope you're staying cool this summer and thanks again for all the inspiration! 😋👍💖

I just wanted to share that my ‘way too fussy teenager’ absolutely loves your deluxe Mac and cheese recipe, he asks for it all the time.. it was his birthday last week, all my kids get to choose what they want to eat for dinner, on their birthdays, guess what he chose haha.
