Well! I have been canning cottage pie and shepherds pie for decades, but never have added wine to it. Generally, I layer it, just as if making it in oven dish. But this recipe is surely worth trying. I just came across your videos this week and already have a half dozen marked to try. Thanks for the great twists to update our canning pantry.

Have to try. My husband is going through your Asian plum sauce like water. And I made a double recipe! Going to have to ration out the rest of the year!😮
Good morning Carter from sunny Queensland Australia. I’ve been binge watching your channel since I stumbled across it a couple of weeks ago. The only thing I have ever canned is strawberry jam, but I’ve just ordered a proper water bath canner, and have asked my family for an AA910 for Christmas. I’ve also been slowly adding to my jar collection in readiness. It’s not very easy to find these things here, I have to order online. Would you mind doing a video (or a pinned post, if that is easier) of recipe books you recommend please. I have the Complete guide to home canning by USDA, The Ball complete guide to home preserving, The all new Ball book of canning and The complete guide to canning by Diane Devereaux. I also ordered Not your mama’s canning book by Rebecca Lindamood but it’s currently out of stock. I ask this as these hasn’t been a recipe that you’ve made that I haven’t like the look of!
Welcome, Angela! I'm so excited for you to be jumping into your canning journey. The two Ball books are excellent. Pressure Canning for Beginners and Beyond is another favorite: amzn.to/3S90e9C. If you are interested in canning jams, jellies, chutneys, etc with less sugar, this one is also great (if you are able to get Pomona's Pectin in Australia): amzn.to/491ErqA
Love your recipes!! We seem to love the same food styles and meal in a jar is the best! As soon as I unpack (UGH moving) I'll try this and a few of your last bean recipes in the Presto electric canner soon to arrive. Thanks for your hard work and videos that make it all look manageable. My kitchen is a mess when i can..haha! Looking forward to what's to come.
Sheron, good luck with your move! You're going to love your new canner. You should ask my husband what my kitchen looks like after I've been in there all day canning! 😬
Hi Carter! Just watching this latest, as life is busy as heck sometimes. Absolutely enjoy watching you break some rules. It keeps life interesting. I bet that tastes really great on a cold winter evening. Best wishes, W.
Wayne! So good to see you! Life does get ridiculously busy sometimes. Hope it's all good busy for you. I'll be here when things settle down a bit for you!
Hi Carter, i often make cottage pie. It's a wonderful comfort dish. A big bowl for supper is just what the doctor ordered. Never thought of canning it, and yes, you cannot incorporate mash 😅 But this looks fabulous!
Wow! This was great, thanks fir the idea! Would love to see suggestions for serving... in a savory pie crust, under a puff pastry, with mashed potatoes, or ???
We have never added peas to our cottage pie, but we did add corn. I have never had it with carrots or celery either. You have made me want to make it this way though. In fact I think I will make it this way this winter just to try it out. It looks delicious. Thank you for sharing this with us
I was just thinking about you last night, that I hadn't seen you for a while. I decided to search for you today and here you popped up this morning. Lovely to see you again! ☺️
Evening Carter. You are such an inspiration. I did the dry canning potatoes; what a saving grace for the potato! Can sweet potatoes be done as well. We had a nice sweet potato crop this year. 15 lbs of stew meat are waiting to be transformed into your ready meal base. Such a great idea. Where did you purchase your lime green colander? Thank you for all you do.
Hey, Judy! A few folks here have tried sweet potatoes, but the ones who have reported back said the end product is not good. I was able to store last year's sweet potatoes for 11 months. In August, I sliced and roasted the last of them, then flash froze and vacuum packed. That's the best way I've been able to find to preserve sweet potatoes. The green colander was bought at TJMaxx 10 or 12 years ago. Thanks for being here, Judy!
Love this, and I love Gordan Ramsey. This is a great idea, Carter. We are raising Lamb and soon will have some meat in the freezer. I will try and make this with Lamb. Super excited. I also wanted to update you on my cumin seeds; you wanted to know how it is ground up. I have ground it up several times, and it is excellent. I love it! So, if you are ever in a pinch and need ground Cumin but don't have but Cumin Seeds, grinding it up works wonderfully. 😀 Have a terrific Day!
Hey, Lori! Good to see you! How great to have access to lamb for this recipe. Please let me know what you think whenever you get to it. Great tip on the cumin seeds! Have a great week!
Hi Carter, I have done this recipe twice now. I love the flavour but for some reason out of 11 jars only 2 sealed each time. What could I Be doing wrong? All my other canning has sealed. I am new to canning. Just 6 weeks into it. Should I re - pressure can them jars that didn't seal?
Excuse me Carter. You are the Chef. Make it anyway you like it. You wrangled that tangle of thyme. That looks delicious. Cannot wait to have this is in my pantry. Thank you Carter.

Hey, Mary! Isn't it awesome? My daughter gave it to me years ago for Christmas. I believe she got it at Bed, Bath and Beyond. I just took a quick look at their site and Amazon, but I don't see it. Sorry!
Love this recipe. Mine is a bit different just hamburger, corn and d potatoes. Always wanted how to can this. I will trying mine even if it has no mashed potatoes. But will have the same taste.
You are correct, the flavor of the celery and carrots cooked in the pan with that little bit of fat brings on a certain smell and flavor that's fabulous. I use that method when making Pasta E Fagioli and then add the tomato paste and let it cook for a couple of minutes it brings on a beefy goodness.
I love Shepherd's pie and can't wait to make (and can) this! But I'm going to wait until my new Nakano knives arrive! I just ordered the Mito Santoku Knife + Steak Knife Set. I guess this is an early Christmas present to myself! Thank you for the discount code...it really helped!😊❤😊
@growandpreserve I recently bought this came canner and am canning at least 1 canner load day. Love it! One question, if I ever needed to use it at a different elevation, does the weight, or can the weight be changed? Thank you for your wonderful teaching videos... And Happy Thanksgiving, 2024.
I LOVED this. I'm a complete baby newbie to canning. I have no tools or supplies yet. 😅 I'm excited to get into it. I do have a question or 2... what's the difference between water bath canning and pressure caning?... I know it's 2 different styles of canning but is one better than the other? Or why choose 1 over the other? Does that make any sense? 😂 thank you ps.... I also would love more "meal in a jar " recipes and instructions. Plz 😊😊
Welcome, Tamilou! I'm happy to have you here. Water bath canning is primarily used for high acid foods (or acidified foods), such as fruits and pickles, jams and jellies, salsas, etc. Pressure canning is used for low acid foods like meats, beans, veggies, soups, etc. If you have a large stockpot, you can use that as a water bath canner for small batches. Here's a video on how to do that: ruclips.net/video/t70FmC2zlSg/видео.html. You can also use most any pressure canner as a water bath canner, as long as it is tall enough to cover your jars with a couple inches of water at a rolling boil. If you are looking at pressure canner, be sure that the one you buy says it is a pressure canner, NOT a pressure cooker. If it's in your budget, I love this one for beginners: ruclips.net/video/Ex-hu7zbZYQ/видео.html Hope that helps!
Hey, Judy! I think that with a side salad and a chunk of bread, a pint and a half would be good. My husband and I split a pint with a really big kale salad, and both of us ran out of stew too soon. 😉
Near the beginning, you were pouring the canned mixture into ramekins. But then you didn't show what you did after. Did you top them with mashed potatoes then bake them further? Or did you just heat them? I'm curious.
I love this thing. Unfortunately, it was a gift years ago from my daughter. She got it from Bed, Bath and Beyond, but I no longer see it on their site. I can't find anything similar on Amazon either. Sorry!
I made this and found out that we don't like thyme!! I gave a couple of pints to a neighbor to see if maybe they like it. I haven't heard back from them. I'm trying to avoid throwing it away. I will make this again, but without the thyme. lol My husband bought me a Presto electric canner after watching your video. I love it so much , I've been hunting for items to can. lol

Hi there Carter (what a cool name BTW) my name is Matt from Australia 🇦🇺 and I’ve been watching your videos for a few months now and you have inspired me to buy a pressure cooker. I bought the best one that I could afford, a Hawkins ‘Big Boy’ 22 litre. Probably not as good as the All American one that you use, but decent enough I think, and four dozen ‘2 Cup’ Ball Mason jars. I haven’t used it at this point on account of that I’m a bit time poor atm, but I’m really looking forward to doing some canning and will be following your advice. Thanks for the informing videos that you post. Thales care, from down under. 👍
Welcome, Matt! I’m so glad to have you here. Your new canner sounds perfect. I’m so pleased to be here with you from the beginning of your canning journey. Keep me posted!
I’ve made a lot of Shepherds pie as well as cottage pie for a monastery where I cooked for 7 years. I’m wondering if you kept the potatoes separate from the vegetables and meat. And add the potatoes to the jar last so it looks more like a cottage pie.
Hello, newest friend!🎉 What a wonderful recipe for a meal in a jar. QUESTION: I'm curious why you don't use a food chopper? As someone with a neurological disability that makes standing for lengthy chopping sessions impossible, but I still love good food. Have a blessed and beautiful day. LUCRETIA 🇺🇸
Welcome, Lucretia! I find the hand chopping works better in videos because my chopper can be quite loud. Absolutely feel free to use a chopper or a food processor. Whatever makes it easiest for you is the right way to go.
I was a little intimidated at first, but plunged right in today after putting it off almost a week 🤗 The taste is magnificent ... absolutely love the flavors ✌🏼
Food choppers work amazing. It would shave off a lot of work for you. Love your channel. I learn new recipes from you. I make the canned potatoes often. We appreciate you. ❤
I really want to get this on my shelf, but don’t have time to do it all in one day. Would it be possible to break it up into a couple of different sessions?
Sure. You could stop just before you put it in jars. Put the pot in the fridge. The next day you could reheat, load the jars and can. You could even chop the onions, carrots and celery the day before you start.
Primarily because I want the veggies to really become part of the meat/sauce. It's what makes this such a great dish. You'll notice I put the potatoes in late because I do not want them to dissolve into the dish.
So I used lamb. I tried to get every bit of fat out of this. It’s in the canner now but I think it’s going to fail because of the fat. 😭😭😭 Update: All seven jars sealed! Must’ve been the great instructor. Thank you Carter. 🥰
Woohoo! I hate that you had a couple hours of worry. As you discovered, there's no need to get all of the fat out. Can't wait to hear what you think when you try it!
Welcome, Jean! I am not an expert on water bath canning low acid foods, but the Amish community here in the US does. So I don’t steer you wrong, search Google for Amish water bath canning chart. You will want to use meat times for this recipe. Hope that helps!
Thanks for the video. A suggestion? Have all of your items prepped and ready to go. You could shorten this video by quite a bit of time by doing so. I found myself fast-forwarding several times just to get to the main points.
Carter.... You're playlist is getting FULL... Do I have to use an expensive red wine... Or will the less expensive work as well?? The reason I ask is because I don't drink wine and therefore know NOTHING about it... Thank You in advance 🤗🤗🙏 Kendra
Do you mean the oil and vinegar bottles in the cabinet next to the stove? I have a love/hate relationship with them. They work well for oils, but they have not been a winner for vinegars because the vinegars form mothers, and it gets to be a clogged up mess. The green glass bottles I use for oils are no longer available on Amazon. These are the clear ones I use for vinegars: amzn.to/47QZfje

Suzanne, if you have any ideas, I’m happy to adjust something. I’ve had a couple other folks in the past year with the same issue, but I have no idea why it happens.
I have had that happen to me on occasion while using earbuds. I typically use only one side at a time (left ear/right ear) so I get twice the listening time. Occasionally, I’ll come across a video that I’ll need to switch earbuds on because the sound will only come out of one earbud 🤷🏻♀️. Not sure of your situation, but thought I’d share in case your situation is similar.

@@growandpreserve Thank you.
I’m just watching your video on shelving for jar storage. Like yourself before having that beautiful space I’m putting my jars all over the house ! I love how you fess up to these things. Lol. Will have to Re-designate a space and hopefully create a nice little storage area also. I so value and appreciate you sharing your experience.
I made the Cottage pie mix this morning and had a little left over for lunch. It was delicious! I have made most of your recipes and love them! Thank you so much for your time put into these videos.
Yay, Janice! So glad to hear it!
Wonderful, Janice. Keep me posted!
THANKS CARTER. ADDING IT TO MY LIST. WHEN I WANT TO GET GREASE OUT OF THE PAN, I USE TONGS AND PAPER TOWEL THEN THROW IN ON THE DOG PAD ALONG WITH THE VEGGIE SCRAPES, ROLL IT AND TOSS IT IN THE TRASH.
this looks delicious, I'll be making this one next but I will add diced rutabagas to it. Thanks for all these great ideas and video!
Cleaning out my freezer. Was looking for something different to can with ground beef. We love cottage pie! Thanks! We have lots of canned potatoes we need to use. Im thinking of leaving out the potatoes and canning the rest
Perfect, Crystal!
Have to try. My husband is going through your Asian plum sauce like water. And I made a double recipe! Going to have to ration out the rest of the year!😮
I love that!
Thanks for adapting and testing the recipes before you present them. I appreciate your time and efforts! I will definitely try this recipe!
My pleasure, Kathi. I hope you love this one. It all started with Gordon Ramsey...hard to go wrong!
Thank you!
David is so funny! Love his honesty.
Thanks, Erika! It is warm and comforting, isn’t it? Hope you have a great week!
Wow! This was great, thanks fir the idea! Would love to see suggestions for serving... in a savory pie crust, under a puff pastry, with mashed potatoes, or ???
All of those sound like great serving ideas!
We have never added peas to our cottage pie, but we did add corn. I have never had it with carrots or celery either. You have made me want to make it this way though. In fact I think I will make it this way this winter just to try it out. It looks delicious. Thank you for sharing this with us
Can't wait to hear what you think of this recipe, Erica!
I was just thinking about you last night, that I hadn't seen you for a while. I decided to search for you today and here you popped up this morning. Lovely to see you again! ☺️
Hey, Em! Good to see you! I post every Saturday. I hope to bump that back up to twice per week when my “life obligations” settle down a bit.
Can’t wait till you publish a cookbook someday! 😉
Thanks, Mary!
Is this recipe still a winner in your pantry? Thinking of making it soon:). Thank you so much for the ongoing ideas and inspiration ❤
Yes, it is!
I ❤ the smell when cooking onions, garlic & celery. I can imagine how your home must smell like 👃
That looks so delicious ‼️ Saved to make soon 👍🤩👵🏻❣️
Another meal in a jar I'm looking forward to trying. Thank you, Carter!
Excellent, Colleen! Hope you love it!
This looks like a winner! I appreciate all the work that you put into these recipes. Thank you!
Thanks, T!
Hi Carter,
I have done this recipe twice now.
Hey, Donna! So good to see you! Let me know if you make this one. It's quite tasty!
I really want to use my new canner soon. Is the Malbec a good wine? I'm a sweet wine and Zinfandel girl. But having eye surgery Wed 25 and also Dec 1 for cataracts. Dang it's tough getting old. Loved your channel. You are so enjoyable to watch. @@growandpreserve
Can you tell me where you found that nice non skid under your cutting board? Thanks Mary W
Hey, Mary! Isn't it awesome? My daughter gave it to me years ago for Christmas. I believe she got it at Bed, Bath and Beyond. I just took a quick look at their site and Amazon, but I don't see it. Sorry!
Thank you for taking the time to look, so kind! Great gift from your daughter! The search begins 😀
Thank you for another fantastic recipe Carter! I just used the Nesco electric canner for the first time. Really hands off
Electric canners are a dream, aren't they? Thanks for being here, Carrie!
Love this recipe. Mine is a bit different just hamburger, corn and d potatoes. Always wanted how to can this. I will trying mine even if it has no mashed potatoes. But will have the same taste.
Good plan, Susan!
Yum!
I cannot find the recipe and measurements linked to this yummy video. It looks making
It's in the description. Underneath the video, click on "more" to open the description.
Marsha, you are going to love your new knives! Can't wait to hear what you think of the Cottage Stew!
This looks so goooood? Thank you and I hope to can this soon. Do you think you need a quart for two people or a pint and a half?
Popped them into the microwave and dug in!
How many minutes did they pressure cook for. Please and thankyou.
75 minutes for pints or 90 minutes for quarts
I made this except I swapped out the potatoes for peas. A few less carbs. came out very good. I will make this one again.
Yay! Thanks so much for reporting back!
I like the silicone mat under your cutting board. I don’t see that on your Amazon list. What exactly is that? Thanks
I love it so much , I've been hunting for items to can. lol
Oh my! Tough time to figure out you don't like thyme after all the work. Have fun with your new canner!
@@growandpreserve Thank you so much for replying!! I greatly appreciate it!! I don't very often send messages. You're the only one that has taken the time to reply out of the 4. Thank you again!! And I do love my canner!!
Thank you so much, Carter! I am definitely going to try this one! Looks delicious!
Welcome, Reatha! Good to have you here!
I will definitely give this a try. I am not seeing the recipe below however. What am I missing? Where do I find the notes?
It's a good one, Bev! The full recipe is in the description box below the video. Be sure to click on See more... to get the window to drop down.
This looks great. I will be trying this.
Hey, Denise! Good to see you.
You could do that, as long as you par-cook the potatoes. Otherwise you have a solid chunk of starch.
I’m going to try that.
Wow! That is something I would make. Looks very good.
Thanks, Sheryl!
Looks delicious. Thanks for sharing 😊
Thanks, Andrea!
I can't wait to make this ❤ from Missouri
Great, Lea! Hope you do. Keep me posted.
I was a little intimidated at first, but plunged right in today after putting it off almost a week 🤗
The taste is magnificent ... absolutely love the flavors ✌🏼
Hooray! I'm so glad you got it done and enjoy it! Thanks so much for letting me know!
Also, realized I had used all my potatoes "dry canning", so I used some dry canned potato chunks, diced...😋 I cannot tell the difference.
Brilliant!@@Lalec122
this has inspired me -- thanks!
I'm so glad!
It is delicious with combo of red wine and Guinness!
Excellent. I think I'll mix lamb and beef and go with lamb broth and I am in! Thank you!
That sounds perfect, Jennifer!
@@growandpreserve use what you have, right?!

Food choppers work amazing. It would shave off a lot of work for you. Love your channel. I learn new recipes from you. I make the canned potatoes often. We appreciate you. ❤
Thank you, td! So glad to have you here. I have a food chopper. I should probably use it more often! Thanks for the reminder.
Why did you need hot jars?
Looks delicious.
@@growandpreserve thank you!! I bit off a little more than I could chew today and my meat is thawed. Lol
Happens to the best of us!@@brandibizzle3676
Oh wow. My husband is sitting here listening to this. He said " you're gonna make this right?"
I love that, Echols! I hope he loves it!
Your reply to your husband should have been, You make it, I will be your assistant.
Why do you cook the veggies?
I don't own a pressure canner, could I waterbath this dish, if so, how long for please. Watching from the UK.
Welcome, Jean! I am not an expert on water bath canning low acid foods, but the Amish community here in the US does. So I don’t steer you wrong, search Google for Amish water bath canning chart. You will want to use meat times for this recipe. Hope that helps!
@@growandpreserve Thankyou so much. I will go and take a look.
I love watching your videos.
Thanks so much, Jean!@@jeanhelliwell8160
You should use your "chopper box" to speed up dicing your veggies! 😁
So true! I always forget it.
Do you think that I can make that recipe using ground pork? I live on a farm, we butchered our pig and have plenty of ground pork in the freezer.
Definitely, just drain the fat well, so you don't end up with a greasy sauce.
Thanks for the video. A suggestion? Have all of your items prepped and ready to go. You could shorten this video by quite a bit of time by doing so. I found myself fast-forwarding several times just to get to the main points.
Pretty much every red meat mince recipe I cook has red wine added at some point :)
Carter.... You're playlist is getting FULL... Do I have to use an expensive red wine... Or will the less expensive work as well?? The reason I ask is because I don't drink wine and therefore know NOTHING about it... Thank You in advance 🤗🤗🙏 Kendra
Less expensive is fine. Just get a Malbec or a Merlot, but it can be cheap.
🥰🥰
I don’t see your vinegar bottle in your store.
@@growandpreserve no. The clear bottle with the small hole you wet your paper towel with to clean rims.
Oh! Now those, I do like. Here you go: amzn.to/3SZGmq2@@lynnthomas8848
Thank you so very much, I am not a fan of single ingredient canning. Blessings 🌟🙏
You’re welcome, Tracy! Hope you enjoy it!
Sorry no sound on the last 3 videos, I watched toutube channel videos all day and just got done watching a Hallmark movie that was sxellent, and now I tried your but no sound.
@@mbmiller1956 I wasn't using ear buds or headset.
Do you use the RUclips app or the internet? One of the two has the sound not turned on.

Funny! I actually have one! There’s something a bit peaceful about all the chopping. My husband thinks I’m crazy. 😜
Don’t you hate it when it comes out perfect? Not even a fast bite left. Cotton Picker!!! I’m going to make a double portion of this for my son & daughter in law. They’re wanting to start putting stuff up, just because. Just in case anything happens. She teaches peeps how to fly air planes. And she just retired 28 years Navy. She worked with Drones. That girl has seen & knows stuff we don’t know. She had so much food put up at one time it all was going bad. I hate that about store bought food. Hey! Momma programmed me to always be ready. My husband says I will not fear. I said me either, but I will do like they did in the Bible & be ready. Just Sayin’
Not even a taste bite left.
Excellent approach, Carolyn! I feel the same in terms of taking care of myself and my own. And yes, drives me nuts when recipes don't leave a cook's treat!
All that lovely fat and meat juice wasted 😣
4 minutes and 20 seconds of talking. I would like to see a slimmed down introduction and just get to the work.
