    I've never given my carbon steel Opinel No. 9 much TLC, a very thin layer of vegetable oil from time to time, and it still works as great as it did when I purchased it. Sharpening is the easiest thing in the world and those Opinels get razor sharp.

    Thanks for the review. I would like to point out that this grinds being convex, that's not the right way to sharpen them. You are damaging the edge. The way you sharped the edge is meant for flat grinds, not convex ones. You sharp convex grinds by pulling the blade the other way around contrary to the cutting direction.

    I own both knives in your video (some variants...different kind of steel and wooden handles). "INOX" in the blade means inoxydable and stands for stainless and is made of Sandvik 12C27M steel. The Carbon Versions exisit of XC90 steel. I like both the No.8 and No.9 very much

    Not super relevant to the video, but I take the chance to plug his work any chance I get... Walter Wells is an awesome maker that takes Opinel blades and makes custom liner lock handles for them. All his work is impressive, but his work with Opinel blades is really unique.
