PINEAPPLE JAM
Preparation time : 10 minutes
Cooking time : 15-20 minutes
Servings : 2
Ingredients
1 big Pineapple - roughly chopped (अनानास)
Water (पानी)
¼ tsp Vanilla Essence (वेनीला एसेंस)
a big pinch Saffron (केसर)
¼-½ cup Sugar (चीनी)
a pinch Salt (नमक)
Process
In a pan add pineapple, and saute for a minute on low flame, then add water.
Mix well, cover and cook on medium heat until soft.
Remove the lid and blend with a hand blender coarsely.
Now add vanilla essence, saffron, sugar, mix everything properly.
Cover and cook for 5 minutes, remove the lid and add the salt then boil it for a minute on high flames.
Switch off the flame and keep aside to cool down. Store it in a airtight container in the fridge.

In Goa I have seen home made pineapple jam since my childhood and we used to cut it directly cut the middle stem and used to scrub on shutterstock.
