The drink that these two restaurants are most known for is their Mai Tai made in such a way that you will not find anywhere else. In the Bali Hai there is a scoreboard showing an ongoing tally of Mai Tais served. If in San Diego, this is a must experience since both restaurants have the best views of the harbor and city skyline.
I know I'm really late here, but man I love it when you do tiki stuff Leandro. Fun drinks are...fun! And I dig the classics, but Tiki can be so fun. Also really damn good cocktails when made properly.

It's a great restaurant as well. If anyone goes to the Bali Hai try the Mai Tai, they'll only serve you 2. I grew up in Point Loma and this is where a lot of family celebrations are held. Beautiful scenery of downtown San Diego and is perfect for watching the boat parade of lights at Christmas.
@@Barprints My wedding reception, my husbands college graduation and my nieces graduation parties have been held there. If you are going to have a Mai Tai, there is a limitation of 2. If you can make it through 1 that is a huge accomplishment. I had to ask for guava juice as I don't drink a lot. Please come visit, it's a great restaurant as well.😁 The city lights are beautiful at night. Not sure if you can make reservations, but if you can ask for a window seat right in front of the window. I wish you well.🍹🌞🌴

Great mix. I bought the Mr. Black also for the drink. I leave the simple syrup out and add 1oz of blackberry brandy to the cocktail. It adds another layer of flavor that works really well with the coffee and pineapple. I found some minor mentioning of using the blackberry brandy and it works!
It is a mind fuck! It will make you learn about the history of the Caribbean as the current styles of the islands are highly influenced by those who used to occupy them. It will get technical as styles of rum aren't as clear cut as single malt vs blends vs grain whisky. Fermentation and distillation will be tackled.

Just made this to use up the coffee liqueur I got to try out a White Russian. It's much more lemony than anticipated. It it's a very well-balanced drink for a Tiki. Thanks Leandro, you did it again :)

I sadly only had kaluha, and I subbed the simple syrup for Demerara syrup on my second drink, and it is still absolutely delicious. This just makes me want to add more coffee liqueur to things.
is it worth making a proxy of this drink if I only have bacardi gold rum and kahlua or will I be wasting my ingredients? I want to try out this coffee+pineapple combination, but I don't want to make a half-cocked cocktail
Hey Leandro since you talked about coffee and Pineaple. Why dont you try Espresso Martiki? It's signature cocktail of Martin Hudak, Mr Blacks Global Ambassador. Its a beautiful cocktail that you should definitely try.
This is pretty darn good! I can easily imagine it being mind-blowing if it weren't for the slightly questionable rums I used. Also, making fresh pineapple juice is such a gigantic pain the ass that I simply used the juice (not syrup) from canned pineapples. It may seem barbaric but it's a compromise I'm willing to make without qualms unless I'm serving a buttload of tiki drinks to a bunch of people.
If you like the flavor profile of pineapple and coffee as much as I do, you should try this Bahama Mama recipe: 1/2oz. Coffee Liqueur 3/4oz. Jamaican Rum 3/4oz. Malibu (Coconut Rum Liqueur) 1/4oz. Light Rum 3/4oz. Lemon Juice 2 3/4 oz. Pineapple Juice 1/2oz. Demarara Syrup As always, shake with crushed ice and open pour.

No man, dark rum is way darker and usually and sometimes have spice added (spiced rum). Gold rum instead is just colored through caramel rum and not requires to be aged (even though about rum there is a mess because of different legislations). The very fine Appleton 12 is an aged rum or anejo, so it is neither a dark neither a gold rum (it's gold but better than a simple gold rum).
Derrick, there are no rules for defining light and dark rum. The color is no indication of flavor profile, aging, or purity. That said, most rums marketed by color are very young with food-grade coloring added (or filtered away). It's far more useful to categorize rums by distillation type, aging regimen, and place of origin. Appleton 12 is a fine rum, and I think it would work very well in this recipe, or any other that calls for a "dark" or Jamaican rum. Cheers
Out of curiosity why don’t you add a few drops of saline solution ala Dave Arnold. I tried this addition and thought it gave a greater depth of flavor. BTW I initially tried Kahlua and it was terrible, you can taste the chemicals.
Depends on the type of juice, but lemon and lime is usually best the day of, but should last a few days to a week. You could juice a large batch, freeze in smaller containers and defrost over night if you don't want to juice every day. But with a hand juicer from Barfly Mixology gear or other hand juicers it's pretty easy to juice enough for a few cocktails on the spot.

Haha, yes, believe it or not, fruit juice is drinkable without alcohol :) If you make too much, you can always freeze it. Pinapple juice, week to week and a half.

I hate to be that guy,but this is NOT the Mai Tai I just had at Bali Hai this past weekend! The server said that there is ZERO juice in the drink and that it’s %100 liquor! So im not sure what this is,but my drink was a citrine color and potent AF! In fact they will only serve you 2 per sitting! So maybe an update is needed to get this VERY popular San Diego drink accurate!

Love this tiki and others that uses coffee liqueur. As you I prefer a strong cold brew coffee liqueur.
For the coffee liqueur, should I use something sweeter like Kahlua or a drier liqueur like St. George?

bandsaw1111 Saline is a great idea in any cocktail with citrus or complex flavors! Do it!
