Great video guys, I'm going to cook some wild hog ribs this weekend. One thing is would recommend is putting all the spices in a shaker. It allows you to apply the spices evenly and no need to rub the meat. Rubbing the meat can cause clumping of spices on the meat. Secondly I would apply the wine prior to the spices so the wine does not rinse off the spices. Keep up the good work!

Looks delicious. Just asking, if you were skinning the hog anyway what was the reason for removing the hair first? I'm new to wild hog and just wondering if this has anything to with the outcome of the taste or are you just trying to keep the hair from touching the meat?
Did you leave the hide on the hind legs and shoulders for roasting? I imagine that’s why you went through trouble of scolding and dehairing the hog rather than just skinning it outright.
Better is relative. But in my opinion it is. One thing is for certain. It’s better for you. Wild hogs have to work for their food. So they are a leaner meat. Much like deer or elk vs cattle.
Because not everyone cooks the same way. Steaming can speed up the cooking process. Example Myron Mixon steams his brisket for the second have of the cook. Not sure if you know who Myron is but just in case he is the winningest guy in BBQ.
@@be891 I know why people steam but I've found that par boiling and steaming changes the meat characteristics. It just tastes water cooked instead of smoked. Ribs have no smoke ring or anything. But that's just my preference.
Only thing I don’t understand is why remove the hair if you’re just going to skin the hog? Seems like an extra step. Do you use the skin for cracklings or....?

have to be really hot water can peal the skin easy
hot enough to scald. Boiling. Wear rubber gloves. These guys are tough as hell , that water will definitely burn the rest of us.

Less fat and tougher meat but other than having to chew a little more it is pretty good.
